This chocolate cake recipe is really a lot like a regular chocolate cake recipe.
The main difference between this vegan cake recipe and a standard chocolate cake recipe is that this recipe contains no dairy.

We are using substitutions for the usual dairy that is added to a cake recipe.
The sweet potatoes act as a binder in place of eggs that are normally used.
Also, we are adding vegan milk instead of regular milk to this recipe.

This recipe is for anyone asking what can be made with sweet potatoes.

If you have leftover cooked sweet potatoes, this is certainly a great way to use them up.
If your sweet potatoes have not been cooked, I will give you instructions on how to prepare them.

  2. To make this recipe you will need sweet potato puree. The easiest way to get a sweet potato puree is to simply buy sweet potato puree in a can.
  3. If you decide to make your own sweet potato puree, avoid boiling the potatoes. This is because the water from boiling can have an effect on the cake.

    How to puree sweet potatoes.

    I mentioned above that the easiest way to get a sweet potato puree is to simply buy sweet potato puree in a can.
    However, you can also do it yourself.

    Pierce each potato a few times with a fork and then place the potato on to a baking sheet.
    Bake the potatoes at 375 for 90 minutes or until soft then allow them to cool before peeling.
    Once cooled and peeled, simply puree the potatoes in a food processor or strong blender.

    How to store vegan cake.

    This cake should be covered in plastic wrap or a similar covering. If properly covered and refrigerated , this cake will stay moist for up to five days.

    About this vegan cake recipe.

    This is a moist chocolate cake recipe.
    It can be topped with melted chocolate to make it even better.

    Sweet potato puree is used in this recipe.

    The sweet potatoes add to the flavor and texture of this recipe.
    Even better, the sweet potatoes act as a binder so that eggs are not needed to bake this cake.

    Ingredient needed to make this vegan chocolate cake.

    • Flour– 2 cups all-purpose.
    • Baking Powder– 2 teaspoons.
    • Baking Soda– 1 teaspoon.
    • Salt- ½ teaspoon.
    • Unsweetened Cocoa Powder– ½ cup.
    • Sweet Potato Puree– 1 cup .
    • Brown Sugar– 1 ½ cups.
    • Almond Milk -1 ⅔ cups.
    • Apple Cider Vinegar– 1 tablespoon.
    • Vanilla Extract -2 teaspoons.
    • Chocolate Chips– ½ cup, melted
    • Topping- ¾ cup chocolate chips, melted
    • Optional- Vegan Butter to grease the cake pan.

    How to make this Vegan Sweet Potato Chocolate Cake.

    • Preheat your oven to 350 and double prep the cake pan. I grease mine and then dust unsweetened cocoa powder or flour .
    • In a medium mixing bowl, use a whisk to mix together the flour, baking powder, baking soda, salt and unsweetened cocoa powder.
    • Next, in a mixing bowl, beat together the sweet potato puree and the brown sugar until blended. Then stir in the almond milk, vinegar, and and vanilla.
    • For the next step we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, gently stirring between additions. Add the melted chocolate and mix until just combined.
    • Transfer the cake batter to the prepared cake pan. Shake the pan onto the counter and smooth the top with a spatula as needed to evenly spread the batter out. Then bake the cake for 60-65 minutes or until an inserted toothpick comes out clean. Very tiny lumps (almost insignificant ones) are ok as this is a moist cake.
    • Allow the cake to cool for at least 15 minutes before inverting it into a wire rack to chill thoroughly. For the topping, melt the remaining chocolate chips pour it over the cake.
