People often ask what exactly is a truffle.
It is easy to confuse this dessert kind of a truffle with the mushroom-like fungus truffle. If you were to ask me, I think that these chocolate truffles are more fun to eat.
Ironically, these truffles actually got their name because they resemble, but are not made with, those truffles that look like mushrooms.
To actually define 'truffle' I would have to tell you that they are usually round, are made with heavy cream and chocolate, and are dusted with unsweetened cocoa powder. However, this definition can also differ depending on the truffle, including the vegan one in this recipe.
This recipe is for anyone asking what can be made with sweet potatoes.
If you have leftover cooked sweet potatoes, this is certainly a great way to use them up.

How to puree sweet potatoes.
I mentioned above that the easiest way to get a sweet potato puree is to simply buy sweet potato puree in a can.
However, you can also do it yourself.
Pierce each potato a few times with a fork and then place the potato on to a baking sheet.
Bake the potatoes at 375 for 90 minutes or until soft then allow them to cool before peeling.
Once cooled and peeled, simply puree the potatoes in a food processor or strong blender.
How to store vegan truffles.
These truffles should be stored in an airtight container.
If properly stored, they should keep refrigerated for up to a well.

How to make date puree.
The date puree in this recipe adds to both the texture and the flavor in these truffles.
Also, the dates give us fiber and potassium with adding technically no fat to this tasty recipe!
To make the date puree, first remove the pits from the dates.
After pitting the dates, soak them in warm water for 20 minutes.
Once dates are soft, drain the water (as much as possible) and puree them with a hand blender or regular blender if you do not have one.
Ingredients needed to make truffles made with dates.
- Sweet Potato Puree- 1 ½ cups. The puree should be chilled before using in this recipe.
- Almond Meal- 1 cup.
- Medjool Dates- 6. The dates should be pitted and soaked as described above.
- Unsweetened Cocoa Powder- 3 tablespoons.
- Vanilla Extract- ½ teaspoon.
- Shredded Coconut- 1 cup, divided.
How to make Vegan Sweet Potato Chocolate Truffles.
- In a mixing bowl, blend together the potato puree, date puree and vanilla extract. Optionally, you can use a food processor or strong blender.
- Add the almond meal, unsweetened cocoa powder, and ½ cup of the coconut and mix until just combined.
- Place the remaining coconut into a shallow bowl. Line a rimmed baking sheet, that can fit into the refrigerator, with parchment paper.
- Use a scoop or large spoon to scoop out individual truffles to roll into balls between your hands. The truffles with be somewhat sticky at first. You can lightly spray your hands with nonstick to help with this.
- Once you have formed the first truffle, roll it in the remaining coconut that is in the shallow bowl and then place the truffle on the lined baking sheet. Repeat until all of the truffles have been made.
- place the baking sheet in the refrigerator so that the truffles can set. It should take about an hour for the truffles to set enough to enjoy.
