    For best results, slice your zucchini as thin as possible (about ¼"). You can use a mandoline to help you do this.

    1. After slicing your zucchini, place them on a small stack of paper towels or clean kitchen towel with a bit of salt sprinkled on top. Doing this for 15-20 minutes can help take out some of the extra moisture that is in the zucchini.
    2. While this recipe uses almond flour, you can make this recipe even more Mediterranean diet friendly by using whole wheat flour instead.
    3. To make this recipe vegan simply swap out the eggs with flax eggs. You can also use nutritional yeast instead of the parmesan cheese.

    How to store zucchini chips.

    These zucchini chips should be stored in an airtight container or zip top and refrigerated. You can simply warm them up in the air fryer to enjoy within a few days.

    About Mediterranean Diet Air Fried Zucchini Chips

    This is a simple recipe for making zucchini chips in an air fryer.
    Air frying these zucchini chips takes out the oil that is needed to fry them.

    Making this recipe involves setting up a dredging station using shallow bowl.

    A dredging station is where we set up shallow bowls filled with the ingredients that are needed to make the coating for the chips. The first bowl will hold the eggs that are needed to bind the dry ingredients to the zucchini chips and the second bowl holds the dry ingredients.

    Ingredients needed to make Air fryer zucchini chips.

    • Zucchini. You zucchinis should be cleaned and ends trimmed off as needed. The skin should stay on.
    • Eggs. The eggs are whipped and then used to bind the dry ingredients to the chips. You most likely will not use all of the whipped egg.
    • Almond Flour. Fine not meal. Also, whole wheat flour can alternatively be used.
    • Parmesan Cheese. The cheese should be grated. Nutritional yeast can be used instead.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
    • Nonstick spray and/or spray of oil such as olive oil.

    How to make Mediterranean Diet Air Fried Zucchini Chips

    Prep time: 10 minutes
    Cook time: 8 minutes
    Total time: 18 minutes
    Servings: 2-4

    • Carefully slice the zucchini if you have not done so. If your slices seem very watery then you can place them on a stack of paper towels or a clean kitchen towel for about fifteen minutes to dry out a bit.
    • In a shallow bowl, beat or whip your eggs.
    • Next, in a second shallow bowl, use a whisk or a fork to mix together the almond flour, the seasonings and the cheese.
    • Preheat your air fryer to 400 and lightly spray the basket.
    • Use a fork to dip the first sliced zucchini piece into the egg bowl and then dip the chip into the flour mixture.
    • Place the chip into the basket of your air fryer. Repeat this process until you can fill the basket without overcrowding the chips.
    • Lightly spray the chips with a bit of oil.
    • Air fry for eight minutes, stopping to flip the chips at four minutes or until crisp.
    • Repeat the process until you are done making all of the chips.

    Expert Tip👉 You can make your zucchini chips even more crisp by giving them a quick spray with nonstick or olive (or other) oil before placing them into the fryer basket and then when taking them out of the basket.
