Surprisingly, you cannot even taste the zucchini when it is baked into this bread. So for parents and other bakers, this may be one method of getting others to eat their zucchini.

This bread tastes like a moist chocolaty treat that is not as sweet as a cake. We are adding a hint of cinnamon and vanilla extract to help balance out the flavors as well.

  1. Because this recipe is friendly to the Mediterranean diet, I am using canola oil. However, you are welcome to use a similar oil or melted butter if you desire to.
  2. This is one of those recipes where double prepping the pan may be a good idea. I use parchment paper with a light spray of nonstick.
  3. This recipe calls for all purpose flour. However, using whole wheat for all or part of the flour is also possible.

About this Double Chocolate Zucchini Bread .

This double chocolate zucchini bread is packed with fresh grated zucchini, rich cocoa powder, and dark chocolate chips. This bread can be served at any time including for breakfast or dessert.

This recipe uses shredded zucchini.

You can use a box grater, food processor or spiralizer to do this. After the zucchini has been shredded, it should sit on a small stack of paper towels to drain some of the water out.

The ingredients needed to make chocolate zucchini bread.

  • Zucchini. Not only does zucchini add a healthy element to this recipe, it also adds structure and moisture to the bread.
  • Flour. My bread uses all purpose flour, however, you can use whole wheat flour.
  • Baking Powder and Baking Soda. To help the bread rise.
  • Ground Cinnamon. This is added for a slight hint of flavor.
  • Unsweetened cocoa powder. This is what makes the bread itself chocolaty.
  • Sugar. This is used to sweeten the bread. You can use monk fruit or a similar granular alternative if desired.
  • Canola oil. This is added for moisture. An alternative of choice can be used.
  • Egg. Also added for moisture.
  • Almond milk. Added for moisture and for blending ingredient. You can really use any milk.
  • Vanilla Extract. Added for a bit of flavor.
  • Chocolate chips. Any kind of chocolate chips, even a mixture, can work. My cake has dark chocolate chips.

How to make Mediterranean Diet Chocolate Zucchini Bread.

Prep Time: 10 minutes
Cook Time: 50 minutes
Servings: 8 slices

  • Start by shredding your zucchini. Then place the zucchini on paper towel to drain while you prepare the recipe.
  • Preheat your oven to 350F and double prep a loaf pan for nonstick. I like to line my pan with parchment that overhangs the pan on the sides. Then I spray the parchment paper with nonstick.
  • In a medium bowl, use a whisk or a fork to mix together the flour, baking soda, baking powder, cinnamon, and cocoa powder. Set this bowl aside.
  • Next, in a mixing bowl, beat together the sugar and oil until creamy. Then add the egg, milk, and vanilla extract.
  • For the next step, add the dry ingredients from the first bowl. I add half of the dry ingredients, stir gently and scrap the sides of the bowl and then add the remaining, Mix this until just combined.
  • Fold in the shredded zucchini and then the chocolate chips.
  • Transfer the batter to the prepared pan and bake the bread for 50-55 minutes, or until a toothpick inserted into the center comes out clean. I would check in more than one place as the chocolate chips may give you a false negative.
  • After you remove the bread from the oven allow the zucchini bread to cool in the pan for 10 minutes before you remove it. Allow the bread to sit on a wire rack to cool completely.

Expert Tip 👉 Allowing the shredded zucchini to sit on a small stack of paper towels while you mix the other ingredients, allows for some of the water to drain off. While some water from the zucchini is okay, too much water can throw off the balance of dry to wet ingredients.

Ingredients

  • 1 cup zucchini
  • 1 ¼ cup flour
  • ¼ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp ground cinnamon

  • ¼ cup milk
  • 1 egg
