  • Eggs-2
  • Vanilla Extract– 1 teaspoon
  • Dried Cranberries– 1 cup.
  • Orange Zest– 1 tablespoon.

How to make Mediterranean Diet Cranberry Orange Muffins.

  • Preheat you oven to 375. Prep a muffin pan for nonstick (spray, oil, or muffin cups).
  • In a medium bowl, whisk together the whole wheat flour, baking powder, and baking soda.
  • Next, in a mixing bowl, beat together the brown sugar with the orange juice until smooth. Then stir in the eggs and the vanilla extract.
  • Add the dry ingredients from the first bowl to the mixing bowl, mixing until just combined. Then fold in the dried cranberries. You batter will most likely have a few lumps or will be thicker than normal.
  • Fill the muffin cups â…” of the way full. Then top each muffin with zest and additional cranberries as desired. You can also sprinkle sugar on top.
  • Bake the muffins for 18-20 minutes or until the edges begin to brown. Allow the muffins to cool in the pan for five minutes before removing.
