This recipe is based upon a basic hummus recipe.
However, we are adding extra flavors to make this hummus taste even beet!

Hummus is a popular dip that originates from the Middle East and Mediterranean areas of the work.
Much of the popularity of hummus has to do with how healthy it is.
Hummus is made with chickpeas.
Usually there is tahini along with flavorings with the chickpeas.
This hummus recipe does not have tahini in it.
I just touched upon the healthy benefits of hummus or hummus nutrition.
It is always a good thing when something that can be eaten as a snack is also a healthy food.
As the ingredients in this hummus are all healthy and known, this is the perfect kind of food in my opinion.
Hummus is packed with protein- the plant based kind.
As a non-meat eater I am excited to eat something that will provide me with over a gram of protein in a tablespoon.
Hummus is also low in calories, carbohydrates, fat and even sodium. It is no wonder why hummus is so popular with so many kinds of diets including the 'not on a diet' diet.
Tips for making hummus.
I suggest purchasing canned garbanzo beans (chickpeas) for this recipe. If you purchase the salt free garbanzo beans you will get a better control over the sodium that is added to your hummus.

Here are some more great tips for you.
- If your hummus seems to be too thick after processing it, add a teaspoon or two of olive oil to thin it out.
- I like to use my Vitamix blender to make hummus. However, a food processor should do the trick if that is what you prefer to use.
- Allow the flavors to blend together for a few hours in the refrigerator before serving. Refrigerating is also a good idea to do before adding any extra seasonings for taste.
How to roast red pepper.
To make this roasted red pepper hummus you will need one large red pepper.
Slice the red pepper in half and scoop out the stalk and the seeds before roasting it.

Preheat your oven to 500 and prep a baking sheet (I use foil).
Bake the pepper halves for 35-40 minutes, stopping to flip the peppers every 10-15 minutes.
Allow for the peppers to cool before adding them to this recipe.
How to store Red Pepper Hummus.
This hummus should be stored in an airtight container.
If properly stored and refrigerated, it should keep for up to five days.

- Chickpeas- 2 cans (15-16 ounces), rinsed and drained.
- Olive Oil- 2 tablespoons.
- Chipotle Sauce- 2 tablespoons, or as desired.
- Garlic- 4 cloves, chopped or minced.
- Ground Cumin- 1 tablespoon.
- Lemon Juice- 3 tablespoons.
- Seasonings as desired.
How to make Chipotle and Roasted Pepper Hummus
- Roast your pepper if not yet roasted and allow it to cool before using in this recipe. Also, drain and rinse the chickpeas.
- Combine the ingredients in a good blender or food processor.
- Process until smooth.
- Add additional seasonings and sauce as desired.
- Transfer to a container, cover the container and refrigerate for 2 ½ to 3 hours before serving to allow for the flavors to blend together. Top will drizzled olive oil and any desired seasonings or toppings and then serve.
