However, I also like the idea of vegan wraps as a meal.
Choose lettuce that is sturdy, in somewhat symmetrical, and is in good shape.
Before adding the lettuce to this recipe, the lettuce should be rinsed to remove the dirt or other objects. Then allow the lettuce to dry while you prepare the inside of the wraps.
Ingredients needed to make vegan wraps.
- Lettuce- 12 average sized leaves rinsed and allowed to air dry. If you are making smaller or larger wraps you can adjust the amount as needed. Good choices for lettuce include Bibb, Boston, or large Romain leaves.
- Black Beans- 1 cup from a can, rinsed and drained.
- Yellow Corn- 1 cup from a can rinsed and drained.
- Onion- ½ cup chopped. Red onion works well in this recipe.
- Tomato- 1 medium sized, chopped fine. Tip, remove as much of the liquid from the tomato before chopping it up.
- Vegan Cilantro Lime Mayonnaise (see recipe above) or Vegan mayo- ½ cup or as needed.
- Lime Juice- 1 tablespoon.
- Avocado- 1 medium, peeled with the pit removed, and chopped.
- Mexican Style Seasonings as desired.
- Optional- Chopped Red Pepper or other pepper.
How to make Tasty and simple Mexican Lettuce Wraps
- Prepare the Vegan Cilantro Lime Mayonnaise is indicated above and store it inside of the refrigerator while you work.
- Rinse off the lettuce leaves and allow them to dry while you work as well.
- Next, rinse and drain the beans and the corn and place them into a large bowl. Then stir in the onion, tomato, lime juice, and mayonnaise. . Add any seasonings as desired.
- To assemble the lettuce wraps. Stir the avocado and then use a tablespoon to spoon one to three tablespoons (depending on the size of the lettuce leaves) onto each lead. Fold the lettuce over the mix and serve.
