This recipe is no different.
This recipe for soup features fresh tomatoes.
You will need three pounds of fresh tomatoes.
That is about nine to 12 average sized tomatoes.
When you are making this soup you may be asking are you supposed to put milk into tomato soup.
Milk is often added to soup to make the soup a more creamy consistency.
However, this is a vegan soup recipe and as a result, there is no added milk in it.
This soup does have a thick consistency though.
The thick consistency comes from the tomatoes that are added.
This includes tomato paste.

I like this soup because it is easier to control the added salt thanks to the fresh ingredients that are in it. However, you can season the soup to your preferences too.

- Using ripe tomatoes is essential to this soup. This is because the ripe tomatoes are more flavorful and meaty.
- Using canned tomatoes is okay but, keep in mind that this will add sodium to the mix. You would need about two large cans and possibly extra cooking time.
- While Roma tomatoes are my pick for this recipe, you can use another tomato. Rome tomatoes have a great flavor and consistency for this soup.
How to personalize tomato soup.
This soup is great the way it is.
It can even be transferred to a slow cooker for sharing with others.
Here is how to make your soup even better.
- Add additional vegetables such as beans or corn.
- If you have some cooked beef, vegan meat, or even chicken, you can toss those in too.
- Make your soup creamy by adding milk, cream, or even coconut cream.
How to store tomato soup.
Leftover soup should be cooled to room temperature and covered before storing it in the refrigerator. It should also last for up to three months if frozen.

About this homemade tomato soup .
This recipe for tomato soup features fresh ingredients such as fresh tomatoes.
To blend ingredients you will need a food processor, blender, or immersion blender.
This soup is also vegan diet friendly.
This means that there is no added cream or milk used to thicken it up.
It is also made using vegetable stock.
Ingredients needed to make vegan soup.
- Onions- 2 yellow. The onions should be chopped.
- Garlic- 4 cloves, minced or chopped.
- Olive Oil- 2 tablespoons.
- Carrots- 2, chopped.
- Tomatoes- 3 pounds. That is about nine average sized Roma tomatoes. For best results, the tomatoes should be ripe and quartered.
- Vegetable Stock- 3 ½ cups plus additional as needed.
- Tomato Paste- 2 tablespoons. You can additional as desired to thicken the soup. Use lower sodium tomato paste if possible.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

How to make Mediterranean Diet Tomato Soup.
- In a large saucepan over medium heat, heat up the olive oil for two minutes. Then stir in the onions, garlic, and carrots. Cook this until the carrot is soft and the onion is translucent.
- Stir in the tomatoes, tomato paste and three cups of the vegetable stock. Bring the soup to a boil and then turn down the heat to simmer. Simmer for 30 minutes, stopping to stir as needed. You can add additional vegetable stock (or water) as needed after removing the soup from the heat.
- Once the soup has cooled to room temperature, you can use and immersion blender or transfer the soup to a regular blender (possibly in batches). Add any desired seasonings at this point. Blend until you reach your desired consistency. You can serve this as is, warm it up, or transfer the soup to a slow cooker.
