  • Garlic- 2 cloves, chopped.
  • Mozzarella Cheese- 1 ½ cups grated.
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
  • Olive Oil– 1 tablespoon.

How to make Baked Eggplant Margherita.

  • Prepare the eggplants as indicated above (rinsed, sliced, and drained). Allow the eggplants to sit so that the excess liquid can drain.
  • Preheat your oven to 400 and prep a rimmed baking sheet (or two) with parchment paper. Then place the sliced eggplant pieces on to the baking sheets and sprinkle them with salt. Bake the eggplant pieces for ten minutes, flip them over and continue to bake until they begin to brown (20 minutes total should work).
  • Remove the eggplant from the oven and top with the tomato sauce, garlic, cheese and seasonings as desired. You can drizzle olive oil on top as desired.
  • Return the eggplant to the oven and bake for another five minutes or until the cheese has melted.
