This recipe is for anyone asking how do you make rice pudding from scratch.

What you should know is that this rice pudding is made without dairy added to it.
Traditional rice pudding is made with milk and sometimes eggs.

For this recipe we will still use the traditional rice.

We will also use some of those other ingredients that add to the flavor of rice pudding.
Once this recipe is flavored, you probably will not even notice that it is a vegan recipe.

You may be wondering what rice is best for rice pudding.

Let me start by saying a white rice is preferred for this rice pudding.
White rice has the perfect amount of starch in it to make this dish into a pudding.

Could you use an alternative to white rice to make rice pudding?

While you could use either a long grain or short grain white rice, I would avoid brown rice as this cooks differently. The rice should be uncooked for best results in this particular recipe.

Tips for making rice pudding.

I just mentioned that rice pudding works best with white rice rather than brown rice in this particular recipe.
The rice should not be cooked as the cooking process is part of what makes the recipe.

Here are some more great tips for you.

  1. This recipe calls for almond milk. I suggest using an unsweetened almond milk so that you can control the sweetness of this recipe. Alternative vegan milk that can be used include oat milk or cashew milk.
  2. Stirring the rice pudding while it cooks is essential to blending the ingredients as they cook. Even more important, in my opinion, is to keep the ingredients from scorching the pot (clean up….).
  3. Feel free to adjust this recipe to your liking. You can add seasonings other than cinnamon, such as Pumpkin Pie Spice or Allspice. Or, you could top this with some berries before you serve it.

Since this recipe does not call for eggs, you may be wondering how do you thicken rice pudding without eggs.

First, I should mention that just about anything that is starchy and cooked on the stove will most likely thicken.
This is especially true as the rice pudding cools.

Here is how to thicken your vegan rice pudding.

If your rice pudding has not thickened even while you allowed it to cool, you can add a small amount of a thickener.
Xanthan gum, arrowroot, and coconut flour stirred in, in very small amounts, can help thicken your vegan rice pudding.

Technically, you can serve rice pudding at any temperature that you like as long as it has been properly cooked.

While you could use either a long grain or short grain white rice, I would avoid brown rice as it cooks differently. The rice should be uncooked for best results in this particular recipe.

Ingredients needed to make vegan rice pudding.

  • Almond Milk– 3 cups. Unsweetened is preferred. Alternative vegan milk that can be used include oat milk or cashew milk.
  • Water- 1 cup.
  • White Rice– 1 cup, uncooked.
  • Orange Zest– 2 ½ tablespoons. That is about one average orange if you are zesting an orange.
  • Maple Syrup– ¼ cup. Alternative sweetener is okay but, I suggest using one that measures closely to maple syrup. Or, you can use your best call for how much to use.
  • Vanilla Extract– 1 teaspoon.
  • Ground Cinnamon- 1 teaspoon.
  • Optional- salt, other seasonings as desired.

How to make Easy Dairy Free Rice Pudding

  • In a saucepan over medium heat, combine together all of the listed ingredients and bring to a simmer. You can add the optional seasonings later as needed if desired. Stir that rice pudding to mix the ingredients as they cook and to also prevent scorching the pudding.
  • The rice pudding will be done when is begins to thicken. Please note that it will thicken more once it begins to cool. It is best to remove the rice pudding from the heat when it begins to thicken rather than waiting.
  • Serve warm or cool as desired. Leftovers can be refrigerated for a few days if covered.
