    I like that it can be made on the grill as well!

    Easy Grilled Eggplant Pizzas

    This idea takes pizza to a whole new level.
    I suspect that this recipe also takes eggplant to a whole new level as well!

    This recipe idea is a creative way to make grilling even better if you ask me.
    However, it is also rather easy to make as well. Really, once you get the eggplant prepared all that you really need to do is grill it!

    To be honest, I think that most people have never even thought about grilling eggplant.

    However, grilling is a great way to prepare this fruit. Yes, eggplant is actually a fruit in case you though it was a vegetable.

    This is especially a great grilling idea for later in the grilling season.
    I am saying this because there is a certain point in the grilling season when you are looking something new, like eggplant, to grill up.
    Coincidentally, it is also the time of the year that we also see eggplants showing up in the produce department at our local grocery stores.

    Getting back to eggplants, they really are a healthy food to eat.

    Personally, I was originally drawn to eggplants because of their beautiful purple-ish color.
    Yes, eggplants are often on the unusual side when it comes to putting them on the shopping list yet, they are worth taking a chance on in my opinion.

    Eggplants are a healthy food to eat and here is why.
    One cup of eggplant has about 20 calories in it. However, that same cup of eggplant is a good source of fiber, fat free, and has about two net grams of carbs in it.

    Being that this is also a pizza recipe, there are a few other ingredients that you will need for this easy eggplant recipe.

    Feel free to sub in ingredients or omit ingredients to suit your needs and diet.
    For the sauce in this recipe you can use marinara sauce, pizza sauce, pasta sauce, or simple tomato sauce.

    Being that this is a pizza, you will also need cheese for this recipe.

    Shredded mozzarella is my first choice of cheese, mostly because I have a lot of it around as I use it often. Other great cheeses that you could use include grated Parmesan cheese, Provolone (usually in slices),, are any great tasting Italian blend of cheeses.

    Italian seasonings and fresh oregano are popular choices for toppings. Also, do not forget about the jarred options such as olives and artichokes.

    As mentioned, for the sauce in this recipe you can use marinara sauce, pizza sauce, pasta sauce, or simple tomato sauce.

    Being that this is a pizza, you will also need cheese for this recipe.

    Shredded mozzarella is my first choice of cheese, mostly because I have a lot of it around as I use it often. Other great cheeses that you could use include grated Parmesan cheese, Provolone (usually in slices),, are any great tasting Italian blend of cheeses.

    Here is what you will need to make this recipe.

    For the eggplant, one eggplant is two servings. Prepare the eggplant by slicing it into ¼-1/3″ slices.

    Also needed for this pizza recipe are these ingredients.

    • Eggplant- 1, sliced into ½-1/3″ slices.
    • Olive Oil– 2 tablespoons.
    • Marinara Sauce– ½ cup. Can alternatively use pizza sauce, pasta sauce, or simple tomato sauce.
    • Shredded Mozzarella Cheese -¾ cup. Can alternatively use grated Parmesan cheese, Provolone (usually in slices),, are any great tasting Italian blend of cheeses.
    • Optional-
      Feel free to use the usual ingredients that you would choose for topping a pizza with.

    How to grill your eggplant pizzas.

    • Preheat your grill on medium heat after prepping the grates or grilling basket as needed for nonstick.
    • To prepare your eggplant slices, simply brush them with the olive oil and allow the olive oil to absorb in while your grill heats up.
    • Grill the first side of the eggplant for 5 minutes covered then flip over and cook for another three minutes.
    • Use a tablespoon to place the sauce on top of the eggplant slices and add your cheese and toppings. Cover the eggplants and grill for another two to three minutes or until the cheese has melted or the eggplant has begun to brown.
