People have asked me what is a charcuterie board.?
Technically, 'Charcuterie' is a French term to describe the preparation of meats.
Before there were refrigerators, meat would have to be preserved so that it would not go bad.
Today, 'Charcuterie' has evolved into more of a presentation of meats for serving.
Yes, most charcuterie boards today feature some kind of a cured meat product along with other food.
Perhaps, since we have refrigerators today, charcuterie boards are more about being a fun serving platter and less about preservation.
So you may be asking yourself is a charcuterie board healthy.
Cured meats are generally processed to make them last longer (among other reasons).
The purpose of processing these meats is also to make them more convenient for use (think about opening up a package of hot dogs and having them fully cooked within minutes!).
Processed meats are not something that is recommended on the Mediterranean diet.
This is because processing introduces other ingredients such as sodium.
The Mediterranean diet focuses on lower sodium, less processing, and healthier ways to eat meats and poultry.

My favorite way to personalize a Mediterranean diet friendly board is to add the most Mediterranean ingredient that I can think of.
That ingredient would be pasta. I use cooked pasta that is large enough to be eaten as a finger food (and dipped into a pasta sauce even) but, small enough that you would not need to eat it with a fork and off of a plate.
This board may not necessarily fit the true charcuterie board definition.
However, it is really intended to be about a healthier way to be like a true charcuterie board.
It is a tasty spread of delicious food that people like,

Mediterranean Diet Friendly charcuterie board shopping list
- Protein- On a normal board this would mean cured meats. However, this is a Mediterranean diet based board. Think sliced cooked chicken breast, shrimp, or cooked ground turkey.
- Dairy- This means cheese and dairy based dips. Cubes of feta cheese, shaved parmesan cheese, or a yogurt based dip (use more than one for variety).
- Fiber- I am thinking vegetables. Veggies can be dipped into something else or eaten as is.
- Acidic or Tangy- Olives of course. Use a variety of olives or olives that have something fun stuffed into them (garlic, blue cheese..).
- Sweet- I love fresh (or dried without sugar etc.) fruit for this. Not only can fresh fruit provide us with some sweetness, they add color.
- Crunchy- My favorite crunchy element would be nuts. Adding a variety of nuts gives flavor, texture, and a bit of salt to your board.
- Textural Element – Think of this as the mountain in the background that makes a view so nice. Sliced baguette or crackers add texture and crunch to the board.
- Pasta- since this is Mediterranean diet friendly, adding cooked pasta, such as rigatoni or penne, is a fun idea. These pastas can be dipped into a sauce or eaten as is.
- Lastly, uniting elements- Uniting elements are the dips, sauces, and spreads that can make other ingredients on your board even better. Luckily, there are choices such as hummus, aioli sauce, and other great tasting dips to choose from.
