You may be wondering are roasted Brussels sprouts food for you.

There is something to be said about being a green vegetable that Brussels sprouts has going for it.
However, there are benefits to eating Brussels sprouts too.

Are Brussels Sprouts good for you?

One cup of Brussels sprouts has just under 40 calories, is fat free, and nets out at under five carbohydrates.
Even better, Brussels sprouts are packed with Vitamin C and are a decent source for fiber.

People sometimes ask how do you get the bitterness out of brussels sprouts.

I must admit that brussels sprouts do have their own unique taste.
While the taste may seem bitter, it can also be easily ‘masked’.

This recipe uses a tasty vinaigrette to help balance out that bitterness.
You can also add a bit of sweetness to balance out the bitterness.
I like a teaspoon or so of honey or maple syrup for example.

Tips for making roasted brussels sprouts

I mentioned that this is a vegetarian recipe as it has feta cheese in it.
Swap out the cheese for tofu or simply omit the cheese if you are looking to make this a vegan recipe.

Here are some more great tips for you.

  1. There are other cheese choices that you can use in place of the feta. I like a parmesan or Romano for example with this recipe. .
  2. This is one of those recipes that works best when roasted on a simple baking sheet. I like using an older baking sheet that is not lined with parchment paper for successful vegetable roasting.
  3. Stir or shake the roasting Brussels sprouts periodical while they bake. This will assure that they get evenly baked .

How to prepare the Brussels sprouts.

If you are using frozen sprouts that come in a bag, they are probably already in good shape.
However, you should have these sprouts defrosted for even roasting.

For this recipe, the Brussels sprouts should be cut in half.

Remove any outer leaves from the sprouts.
Also, cut of the brown ends if they are still attached.

How to serve brussels sprouts with feta and balsamic.

This recipe is perfect when served as a side beside something else.
However, you could add some cooked chicken or shrimp and serve it as a meal or use it to fil la tortilla to eat as a wrap.

Roasted Brussels Sprouts with Feta

How to make the balsamic vinaigrette.

The brussels sprouts are tossed in balsamic vinaigrette before roasting.
The vinaigrette helps to balance out the flavor of the sprouts.

To make the vinaigrette, simply whisk together the following ingredients.

  • Olive Oil– 3 tablespoons.
  • Balsamic Vinegar– 2 tablespoons.
  • Garlic Powder– ½ teaspoon.
  • Optional- maple syrup or honey– 1-2 teaspoons or as desired. Also, salt as desired.

Ingredients needed to make Roasted Brussels Sprouts with Almonds and Feta.

  • Brussels Sprouts- 1 pound, prepared as indicated above.
  • Almonds– ¾ cup raw.
  • Feta Cheese- 8 ounces, crumbled and chunked.
  • Balsamic Vinaigrette- as prepared above.
  • Olive Oil- as needed.
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
  • Optional- cranberries, dried fruit, or pine nuts.

How to make this recipe for Roasted Brussels Sprouts with Feta.

  • Preheat your oven to 375. Lightly spray a baking dish or rimmed baking sheet for nonstick. Prepare the brussels sprouts as indicated above if you have not already. Also, make he balsamic vinaigrette if you have not already done so.
  • Place the prepared sprouts in a large bowl and toss it in the vinaigrette. I like to drizzle half of the vinaigrette, toss the ingredients and then add the remaining before tossing again. Then transfer the prepped baking dish or pan, spreading the ingredients out evenly. Bake this for 12-15 minutes or until fork-tender (stirring after six minutes).
  • Meanwhile, prep another baking dish or pan with a bit of nonstick. Place the almonds in the pan/dish and drizzle with olive oil and any desired seasonings. Roast this in the oven for 10-12 minutes, stirring as needed, until toasted.
  • To assemble to dish, place the sprouts into a large serving bowl and top with the roasted almonds. Add the feta and any desired seasonings and serve.
