This recipe is especially for anyone asking is roasted cauliflower healthy.

Certainly any time that you sheet pan roast rather than fry in oil, you are doing well when it comes to how you are eating. You are not getting all of that (usually not so good for you) frying oil when you roast.

Cauliflower does have its benefits.

The average head of cauliflower has under 150 calories and 17 grams of total net carbohydrates in it.
Cauliflower is also a good source for fiber, Vitamin C, and Vitamin B-6.

You may be wondering what is the difference between chimichurri and gremolata.

Gremolata is a popular Italian sauce that is often served with fish or meat.
This green sauce is made with lemon, garlic and parsley.

Chimichurri on the other hand, is popular in South America.

This green sauce is also made with parsley. However, instead of lemon, chimichurri has garlic, oil, vinegar, and chili pepper. These sauces may look alike however, that do not taste the same.

Roasting Cauliflower on Sheet Pan

Tips for roasting cauliflower.

This recipe works best when you use a fresh head of cauliflower.
Pull off the outside leaves and any bruised or discolored areas.

Here are some more great tips for you.

  1. I like to clean my cauliflower before I use it. Some folks like to soak their cauliflower in water for a few minutes and then rinse it off in cold after breaking off the florets.
  2. To cut the cauliflower head, start by cutting it in half from top to bottom through the stem. You can also cut off the stem.
  3. Break off the florets into bite size pieces for this recipe. I like to rinse my florets at this point and then dry them with a clean kitchen towel or paper towel.

How to make Italian Gremolata

We will not actually be roasting the cauliflower in the gremolata.
This is because we want the cauliflower to be crisp rather than too soft from the roasting .

Here is what you will need to make the Gremolata.

Olive Oil– 1 cup, Lemon Zest– 1 tablespoon, Lemon Juice– 2 ½ tablespoons, and seasonings to taste (salt, pepper, or whatever you like). Simply whisk or use a fork to blend these ingredients together.

Sometimes people ask why is my roasted cauliflower mushy?

This usually happens when the cauliflower is not fully dry before roasting it or there is too much of a liquid or fat added to the baking sheet. For best results, make sure that you cauliflower is fully dry, is placed in a single layer on the baking sheet, and that it gets evenly roasted for best results.

Sheet Pan Roasted Cauliflower with Gremolata

This is a simple recipe that calls for roasting cauliflower on a sheet pan.
The roasted cauliflower is then tossed in a homemade Gremolata sauce.

Here is what you will need to make the Gremolata.

Olive Oil– 1 cup, Lemon Zest– 1 tablespoon, Lemon Juice– 2 ½ tablespoons, and seasonings to taste (salt, pepper, or whatever you like). Simply whisk or use a fork to blend these ingredients together.

Ingredients needed to make sheet pan cauliflower with gremolata.

  • Cauliflower- 1 head. You cauliflower should be rinsed and broken into bite sized florets. There are tips for cleaning and preparing your cauliflower.
  • Olive Oil- 2 teaspoons for roasting. You can add additional as needed.
  • Seasonings as desired.
    This can include Italian Seasonings, Salt,
    and/or Pepper. I like a
    Mediterranean Diet Seasoning Blend.
  • Gremolata Sauce- as described above.

How to Make Sheet Pan Roasted Cauliflower with Gremolata.

  • Preheat the oven to 400. You will need a rimmed baking sheet to roast the cauliflower on.
  • Prepare the cauliflower by rinsing it off and then breaking off the florets into bite sized pieces. I have more tips for doing this above. Make sure that the cauliflower is dried off before using it in this recipe.
  • In a large bowl, toss the cauliflower in two teaspoon of olive oil. Then place the cauliflower on to the rimmed baking sheet. Make sure that the cauliflower in placed in a single layer and not touching one another if possible. You can sprinkle the cauliflower with seasonings if desired.
  • Roast the cauliflower for 18-20 minutes or until it turns golden and tender. About half way through, flip the florets to ensure that they roast evenly.
  • Meanwhile, prepare the Gremolata as described above.
  • When the cauliflower is done roasting, transfer it to a serving bowl and toss with the gremolata before serving.
