About these vegan Triple-layer Brownies
As mentioned, there are three separate layers to these brownies.
While this is a no-bake recipe, you will need to refrigerate between adding the layers.
The bottom layer is the brownie layer that includes the dates.
Peanut butter and maple syrup make up the center layer.
Lastly, the top layer is made with melted chocolate.
Ingredients needed to make layered vegan brownies.
The ingredients are listed by layers for ease of following.
- Dates- 8 ounces (about 12). The dates should be seedless and soft.
- Peanut Butter- â…” cup. Use smooth peanut butter that is also vegan.
- Unsweetened Cocoa Powder- 6 tablespoons.
- Peanut Butter- ½ cup.
- Maple Syrup- 1 tablespoon.
- Dark Chocolate- ½ cup melted.
- Vegetable Oil- 1 teaspoon (this is optional and you can use coconut oil instead).
How to make Vegan 3 Layer Brownies.
- Line a square baking dish with parchment paper that overhangs the edges of the dish.
- In a large mixing bowl stir together the dates and (first instance of) peanut butter until just slightly mixed. Transfer this to a strong blender or food processor along with the unsweetened cocoa powder and blend until smooth. Press this layer into the prepped baking dish and refrigerate for 20 minutes to set.
- For the center layer, blend together the remaining peanut butter and the maple syrup until blended. Spread this over the bottom layer and return this to the refrigerator to set.
- Lastly, melt the chocolate in a microwave safe bowl, stopping to stir every 30 seconds. To smooth this out you can stir in the oil. Evenly smooth this layer over the brownies and then return the baking dish to the refrigerator to set (about 30 minutes).
- To serve, lift the set brownies from the baking dish and transfer to a flat surface to cut.
