Ingredients needed to make slow cooker chili chicken soup.
- Chicken- 1 pound boneless and skinless breast.
- Cannellini Beans– 1 can, 15-16 ounces.
- Black Beans– 2 cans, 15-16 ounces.
- Fire Roasted Green Chilis – 1 can, four ounces. Yes, you can omit or alter the amount if this is not part of your comfort zone.
- Fire Roasted Tomatoes – 1 can, ten to 14 ounces depending on how daring you are.
- Green Enchilada Sauce – 1 can, 15 ounces.
- Chicken Broth– 1-2 cups as needed. I mentioned above that vegans can use a vegan broth.
- Chili Powder– 4 teaspoons.
- Cumin– 1 tablespoon.
- Minced Onion (dry minced onion)- 1 tablespoon.
- Paprika– Âľ teaspoon.
- Cream Cheese- One 8 ounce bar. Vegans can use tofu or omit this. The cream cheese should be at room temperature and cut into one to two inch chunks. You will not need the cream cheese until the chicken has cooked through.
- Additional seasonings such as salt and pepper as desired.
How to make Slow Cooker Chili Chicken Soup
- In a 6 quart slow cooker, combine all ingredients except for the cream cheese. Cook this on low for five to seven hours or high three to five hours for the chicken to cook through.
- Once the chicken is fully cooked you can remove it from the soup and shred it. Tip: use two forks to shred the chicken as it will be warm and the two forks work great! Set the chicken aside.
- Next, add the room temperature cream cheese to the slow cooker. Your slow cooker should be set on low. Use a whisk or large spoon to blend the cream cheese in. Once the soup has reached a smooth consistency you can return the chicken to the slow cooker and cook for another 10-15 minutes and then serve.
