If you are someone, like me, who likes a warm bowl of soup on a warm day, this is a soup for you! I like how this reminds me so much of my Fire Roasted Tomato recipe.

This recipe reminds me so much of my Fire Roasted Tomato recipe that I like to actually incorporate the two together.

What I mean is that you could easily add some homemade fire roasted tomatoesto the slow cooker with the other ingredients that you add to this recipe. Fire roasted tomatoes add a lot to the flavor of this soup.

You may be wondering what is the best slow cooker.

To be honest, there are a lot of great choices of slow cookers to choose from. Possibly the most famous brands of slow cookers is the crock pot brand. Crock pot has many choices of slow cookers from your inexpensive basic, yet dependable, slow cooker to your programmable one.

Sometimes you need a basic slow cooker to get the job done and other times you need one appliance that does more than one thing.
Personally, I like having options even if the option of choice at the moment is the basic on. However, sometimes I really can appreciate the need for one pot that does many things such as one of these multi cookers.

Minestrone soup got its name from the ingredients that are in it.

Technically, ‘minestrone’ refers to a thick vegetable soup. Also, we can all agree that minestrone soup is a thick vegetable soup.

Minestrone soup differs from vegetable soup in that it is thicker soup.
Certainly both soups are vegetable based. However, minestrone soup comes with an Italian twist such as pasta that is added to it.

Here are some Tips for making your Slow Cooker Vegetarian Minestrone Soup.

I already mentioned that we are making this in a slow cooker. The kind of slow cooker that you use simply needs to be at least a six quart size slow cooker.

Here are some more great tips for making soup in a slow cooker.

  1. Saute your garlic and onion before adding it to the slow cooker for a richer taste.
  2. Folks who are not vegan or vegetarian can sub in beef broth for half of the vegetable broth for a bit more taste.
  3. To give your soup a bit of a kick, add a teaspoon or two of Tabasco sauce or some chili powder.

This minestrone soup is actually quite filling.

I say that because this soup is incredibly filling once you add a bunch of vegetable to it.
You really could easily enjoy this soup as your meal with perhaps a side salad and some kind of a bread as well.

This minestrone soup is also pretty healthy thanks to the vegetables that are added to it.

While we are adding some pasta to this recipe, you could skip the pasta addition if you desire and make this a lower in calorie soup.

Adding pasta to the soup is what will help make it so hardy.

Popular pastas to add to minestrone soup include ditalini pasta because of its small size or a macaroni pasta (or elbow). Cooked orzo is another great option for minestrone soup.

Here are the ingredients that you will need to make this Slow Cooker Vegetarian Minestrone Soup.

  • Vegetable broth– 4 cups. You can find vegan broth choiceshere as well. Also, adding two additional cups will give your a less dense soup if desired.
  • Diced Tomatoes– one 14 (13-15 is okay) ounce can. Most cans are closer to 14 ounces however, the smaller sized cans often have other flavorful ingredients added to them.
  • Beans– 1 can drained. Cans are around 15 ounces each. You can omit the beans if desired.
  • Onion – 1 small chopped (about 1/2 cup).
  • Garlic-3 cloves minced garlic (about three teaspoons).
  • Chopped Carrots- 1/2 cup. That’s between 1 1/2 and 2 carrots depending on the size.
  • Pasta- 1/2 cup. Choices include ditalini pasta because of its small size or a macaroni pasta (or elbow). Cooked orzo is another great option for minestrone soup. Having your pasta cooked before adding it to the slow cooker will help maintain the liquid balance of the ingredients. If you are someone who chooses to add your pasta to cook in the slow cooker, please add additional liquid as needed to compensate.
  • Seasonings to taste. This can include Italian Seasonings, Salt, and/or Pepper.
  • Optional- chopped celery (1/3 cup), green beans (1 cup),
  • and/or chopped spinach (2 cups).

How to make Slow Cooker Vegetarian Minestrone Soup.

  • Add the broth to your slow cooker and then stir in the tomatoes,beans, onion, garlic, and carrots. You can add the optional celery and green beans at this point as well.
  • Cover the slow cooker and cook on low for six to eight hours (or high for three to four hours).
  • Add the remaining ingredients and cook on low for another half hour.
