Ingredients needed to make Mediterranean Diet Caprese salad.
- Roma Tomatoes- 5 average sized. If you choose to use another tomato, you will need about a pound. Use a firm tomato as we will roast them for this recipe. The tomatoes should be washed and quartered (Roma).
- Avocado- 1 firm yet, ripe. The avocado should be peeled and pitted.
- Bocconcini Cheese- 1 cup. This is basically mozzarella cheese that is in balls. Thus, you can use cubed mozzarella if you cannot find bocconcini cheese or a vegan mozzarella alternative.
- Basil- ½ cup fresh leaves. That is about a bunch, washed, and with the stems removed.
- Olive Oil- 2 tablespoons divided.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
How to make easy Caprese salad
- If you have not done so, prepare the tomatoes for roasting by slicing them into quarters (Roma). Also, preheat a skillet on medium heat with a tablespoon of oil. When the skillet is warm, place the tomatoes, with the flat side down, on the skillet for roasting. Add any seasonings as desired. Cook the tomatoes for about five minutes and then flip them over for another two. Then remove them from the heat and allow the tomatoes to cool to room temperature.
- Prepare the avocado by removing the skin and the pit. Then slice the avocado into bite-sized pieces.
- To assemble the salad, in a large bowl, combine together the tomatoes, avocado, cheese and basil. Then toss with the remaining olive oil and seasonings as desired.
- Serve immediately.
