- Bread- 4 cups of bread cut into ½-1 inch cubes. Stale bread works best. Also, country bread is the preferred bread, if you can find it where you are located.
- Olive Oil- ¼ cup.
- Cherry Tomatoes- 1 ½ cup cut in half.
- Strawberries- 1 cup also cut in half.
- Cucumber- ½ English or one large regular chopped.
- Red Onion- 1 small, finely chopped.
- Mozzarella- 1 cup cut into cubes. Feel free to use vegan mozzarella .
- Fresh Basil- ½ cup chopped fine
- White Wine Vinegar- 3 tablespoons. (can sub in the Vinaigrette dressing provided above).
- Salt and pepper to taste

- Heat the olive oil in a large skillet or sauté pan. When the oil becomes warm you can add the bread and any desired seasonings. Toss the bread while it cooks to evenly cook all the sides. When the bread is browned on the outside, about 10 minutes, you can remove the pan from the heat. If needed, you can add additional olive oil as needed or toast the bread cubes in batches.
- Next, in a large bowl, combine together the tomatoes, strawberries, cucumber, and onion. Then add the cooled bread cubes and toss with the remaining ingredients. Season as needed or desired.
- Serve immediately or allow to sit for up to a half hour so that the flavors may blend together.
