This is a simple sheet pan recipe for baking chicken with vegetables.
The chicken will need to be baked longer than the vegetables which means that the vegetables will be added to the sheet pan after the chicken has started baking.
This recipe has been developed for chicken thighs.
However, you can use the chicken cuts of your choice.
Keep in mind that you may need to adjust baking times as the thighs usually take longer than other pieces to fully bake.
Ingredients needed to make this sheet pan dinner.
- Chicken Thighs- 4. The chicken should have the skin on and with bones.
- Olive Oil- 2 tablespoons, divided.
- Carrots- ½ cup of 1-2" size.
- Potatoes- 1 pound, baby or cut to ¾-1".
- Broccoli Florets -2 cups.
- Green Beans- ¾ cup.
- Bell Pepper-1, sliced and with insides removed.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

How to make Sheet Pan Chicken with Vegetables.
- Preheat the oven to 400° F and prep a rimmed baking sheet for nonstick.
- Pat the chicken with a paper towel to remove excess moisture. Sprinkle the chicken with any desired seasonings.
Then use a pastry brush to brush the tops with 1 tablespoon of olive oil.
Set the chicken skin side up on the prepped baking sheet. Cover the chicken with aluminum foil and bake for 20 minutes. - While the chicken is baking, in a large bowl, combine the carrots, potatoes, broccoli, beans, and the green pepper. Add the remaining olive oil and any seasonings to the bowl and toss the vegetables until they are all covered.
- After the chicken has baked for 20 minutes you can remove the baking sheet from the oven.
Transfer the chicken onto a plate and then drain and discard the juices from the pan.
Next, place the vegetables and then the chicken back into the pan in an even layer. Reduce the heat to 375° F.
Return the sheet pan to the oven and bake for 35 to 45 minutes, or until internal temperature of the chicken reaches 165° .
