These Easy Mediterranean Chicken Kabobs are perfect for all of the warm weather grilling.
I like that these kabobs can include just about the entire meal on one skewer too!

Easy Mediterranean Chicken Kabobs

Easy Mediterranean Chicken Kabobs

I am calling these ‘Mediterranean’ because these kabobs are friendly to the Mediterranean Diet.
Not only do these kabobs feature chicken, they also have some yummy vegetables on the as well.

The list of ingredients in this recipe is a short one.
Everything that you put onto your skewers are foods that you already know. I am talking about the great tasting vegetables in addition to the chicken.

Make this recipe a grilled tofu skewers recipe and keep it vegan!

While you may be a fan of chicken, there is a way to make this recipe more vegan friendly.
I am talking about substituting in tofu for the chicken.

If you plan on making tofu kabobs, look for a Firm Tofu (like one of these) .
A firm tofu will stay together better on the grill. Also, prep the grill grate for nonstick before you start your fire or place the grate onto the fire as tofu can get sticky.



You will also need to do a bit of prep to your bamboo skewers before you get started with your grilling.

Simply soak the skewers in water for about an hour and a half before you actually go to assemble the kabobs. This will help prevent them from burning as they are made out of wood.

Also, I am suggesting that you use breast meat for this recipe.
This is because the breast meat is the healthier choice of chicken meat. Thus, your chicken kabobs will be more friendly to
the diet.

We will start by marinating the chicken in order to both give them flavor and keep them moist.

Simply cut your chicken into 1 to 1 ½″ chunks. Then you can place the chicken into a zip top bag with your marinade to soak while you prepare the other elements of your kabobs.

The good news is that the chicken can be prepared ahead of time.
You can then allow them to soak in their bag in your refrigerator. Some folks will even do this the day before they actually make their kabobs.

Lastly, I suggest using vegetables that are in season if possible as they will be fresher and better in quality.

Popular choices for Mediterranean Diet vegetables for kabobs include zucchini, peppers, tomatoes, and onions. Cut these up to the size of your chicken chunks (1- 1 ½″).

I am reminding you here that if your are using wooden skewers for this recipe then you will need to do a bit of preparation first. To prep to your bamboo skewers before you get started with your grilling simply soak the skewers in water for about an hour and a half before you actually go to assemble the kabobs. This will help prevent them from burning as they are made out of wood.

Also, you can make this barbecued recipe more vegan friendly.
Make this recipe without meat by substituting in tofu for the chicken. For best results, look for a Firm Tofu (like one of these) . Lastly, prepare the grill grate for nonstick before placing it on top of the fire.




Popular choices for Mediterranean Diet vegetables for kabobs include zucchini, peppers, tomatoes, and onions. Cut these up to the size of your chicken chunks (1- 1 ½″).

  • Chicken Breast- About two pounds, cut into 1- 1 ½″ chunks. Make this meatless by using Firm Tofu instead.
  • Olive Oil– ½ cup.
  • Garlic– 3 Cloves, crushed or minced.
  • Lemon Juice– ¼ cup.
  • Seasonings– ½ tablespoon total. This could include salt, pepper, or a mixed seasoning.
  • Peppers- 2, yellow green or red. Cut this into chunks that are the same size as the chicken.
  • Onion-1 sliced into wedges if possible.
  • Zucchini- 1-2 depending on size, sliced.




How to make these Easy Mediterranean Chicken Kabobs.

  • If you have not prepared your skewers, you can put them in water now to soak.
  • Place your cut up chicken into a large zip top bag.
  • In a mixing bowl or large measuring cup, whisk together your olive oil, garlic, lemon juice and seasonings. Pour half of this mixture over the chicken in the bag. Cover the remaining mixture and place it into the refrigerator for use later.
  • Seal the top of the zip bag and evenly distribute the marinade over the chicken. You can shake it or toss it between your hands or do what method works best for you. Then place the bag into the refrigerator for at least a half hour to marinate the chicken. This is a good time to slice up your vegetables if you have not done so. Slice them into the same or close to the same size as the chicken has been sliced into for best results.
  • When you are ready to make your kabobs, preheat the grill to a medium high setting. Assemble the ingredients on the skewers, alternative the ingredients. Then discard the bag with the marinade that the chicken had been soaking in.
  • Grill the kabobs until the chicken has been cooked through. This should take about 10-12 minutes, rotating the skewers as needed. You can brush on the remaining marinade while the chicken is cooking to keep the chicken moist.
