I should also how easy this is to make. Also, this mini omelet recipe is also pretty impressive to serve to other too!

You may be wondering if you can eat eggs on the Mediterranean diet.

If you are familiar with the diet then you already know that the Mediterranean diet really has an emphasis on fresh and healthy foods. Fresh fruits, legumes, whole grains and vegetables are what are emphasized on the Mediterranean diet.

The Mediterranean diet is not just a diet.

It is really more of a way of life that has an emphasis on healthy eating. This healthy eating is more about avoiding overly processed food and eating in moderation.

Make these portable omelets in a muffin pan or a ramekin.

I like the idea of making an omelet in a muffin pan when I am looking for convenience. All you need to really do is prep the muffin pan, pour the batter into each opening, and bake.

However, when I am looking to impress folks, I often like to bake these mini omelets in an individual ramekin.

I like the presentation that these baked eggs in their individual ramekin give when I am entertaining others for breakfast or brunch.

Both the muffin pan version of this mini baked egg omelet and the ramekin version are good choices if you were to ask me!

Here are some helpful Tips for making your Mediterranean Diet Mini Omelets

I just mentioned that you have options as to what to bake your eggs in. You can bake these omelets in a muffin pan or a ramekin

Here are some more great tips for you.

  1. To make your eggs fluffy we add a bit of water or milk to them and whip them up well. I prefer using a whisk to get a lot of air into my eggs.
  2. Make these mini omelets in a Denver version by adding some meat (usually ham) green peppers, onions and cheese.
  3. Normally we add cheese to baked eggs as cheese adds a bit of fat as well taste. Since this recipe is has a Mediterranean diet focus, we will add a smaller amount of cheese than you may be use to experiencing with baked eggs. However, if you want to maintain that great cheese taste, I suggest using a stronger tasting cheese such as a sharp cheddar.

This recipe for baked eggs has a bit of leeway when it comes to customizing it to your tastes.

Gently folding in a bit of spinach before baking this is one way to customize this recipe. When you is done baking, you will have a crustless quiche.

Here are a few more ideas for customizing your muffin eggs.

  1. Bake this recipe in a casserole dish instead of individual sized ramekins or muffins. Be sure to bake it well however, as it may take a few more minutes to bake the eggs fully.
  2. Add a bit of seafood to your eggs before you bake them.
  3. Consider serving these mini omelets for dinner instead of breakfast.

While this specific recipe does not call for adding meat, you are welcome to do so if you desire to.

When you add meat to your eggs, be sure that the meat is pre cooked and not raw. This is because the meat will most likely take longer to fully cook to a safe temperature than the eggs and also, to cut down on adding any not needed bad fats to your recipe.

I like the idea of making an omelet in a muffin pan when I am looking for convenience.

However, when I am looking to impress folks, I often like to bake these mini omelets in an individual ramekin.

I also mentioned that you can bake this recipe in a casserole dish instead of individual sized ramekins or muffins. Be sure to bake it well however, as it may take a few more minutes to bake the eggs fully

Here are the ingredients that you will need to make these Mediterranean Diet Mini Omelets

  • Olive Oil – 2 teaspoons or as needed.
  • Eggs- 8.
  • Half and Half- ½ cup. Feel free to sub in other dairy products. Dairy-. You can use milk, skim milk, half and half, sour cream, Greek Yogurt or a mixture of two. Your choice of dairy should have something to do with how much fat, calories, carbs, you want in your eggs versus the consistency and taste.
  • Cheese- ¼ cup. I am a fan of shredded cheddar cheese in this recipe. But, if I am feeling ‘extravagant’ I may use shredded Gruyere cheese.
  • Chopped Vegetables- 1 cup. This can include chopped peppers, broccoli, green onions, or even spinach.
  • Seasonings to taste-
    This can include Italian Seasonings, Salt,
    and/or Pepper.

Instructions for making this recipe.

Tip- if you are baking your eggs in ramekins, you can bake them in a water bath to insure that they bake evenly and through. To do so, use a baking dish to bake the ramekins in. Start by placing the baking dish into the oven, then place the filled ramekins into the baking dish and fill the baking dish with hot water to about ⅓- ½ height of the ramekin. I will also add that if you are using this method of baking, that the omelets may bake faster and to take precautions as the water will be very hot.

How to make this recipe for Mediterranean Diet Mini Omelets .

  • Preheat your oven to 350. Prep your muffin pan or ramekins with the olive oil as this recipe is prone to sticking. You can also spray a bit of nonstick over this.
  • In a mixing bowl use a whisk to beat together the eggs and dairy until they are fluffy.
  • Next, stir in the cheese and any desired seasoning.
  • Fold in any vegetables or remaining ingredients and then evenly transfer the mixed ingredients to the prepared ramekins or muffin pan.
  • Bake your omelets until the appear to be firm. Depending on what you are baking them i, this can be 25-30 minutes. Remove from oven and allow them to set for five to ten minutes before serving.
