This recipe for lemon pepper salmon reminds me a lot of my Mediterranean Diet Chicken Piccata as they both feature the great taste of lemon. However, this recipe also features the great taste of pepper as well.
It really is the interaction that lemon and pepper have together that make this such as great tasting recipe.
While the lemon gives us that tangy citrus flavor, the pepper seems to send our taste buds in a different direction. I love the way that these flavors balance one another to make such a great taste for fish, especially salmon!
Some folks wonder what lemon pepper seasoning is actually used for.
I should say that in a recipe such as this one, the lemon pepper seasoning is used to create a great tasting salmon. But, in reality, a lemon pepper seasoning is the perfect seasoning to sprinkle on top of chicken or fish for baking.
Lemon pepper seasoning is really a combination of lemon zest and pepper.
The oil from the zest works with the pepper to marry into a great taste. Lemon pepper zest is also a great seasoning alternative for anyone avoiding salt as it gives us this great flavor without having to be salty. YAY!
This fish recipe should be made in a, aluminum foil lined glass baking dish.
Certainly, it is not every day that we line a glass baking dish with aluminum foil to bake something. However, what this foil will do in this recipe is help keep the salmon from drying out.
Alternatively, you could try making this salmon in an ovenproof skillet.
I would suggest not using aluminum foil with this skillet method. Instead, start by cooking the salmon in the skillet after warming up the oil. Once the salmon begins to brown, transfer the skillet to the oven to finish.

I already mentioned above that we will use foil to keep the salmon from drying out while it is baking. Also, I gave an option for making this recipe in an ovenproof skillet by starting it on the stove and transferring the skillet to the oven to finish.
Here are some more great tips for you.
- Look for a lemon pepper seasoning that does not have salt added to it. The lemon and the pepper really give this salmon all of the seasoning it needs.
- If you are able to enjoy butter, swap out half of the olive oil with melted butter. We know what butter can do for the taste of about anything.
- Using lemon juice and freshly ground peppercorn instead of just the seasoning is a great way to amp up the taste of this recipe.
I am always thinking of what I can serve a salmon dish such as this one with.
I like something simple such as my Greek Salad in Vinaigrette Dressing (you can easily swap in another dressing if desired). Another favorite idea for a side to serve this recipe with would be my Mediterranean Style Green Bean Salad.

As far as a wine pairing for this recipe, you could easily work off of the lemon tones of this dish as well as the salmon and the pepper.
Zinfandel is almost always a safe bet to serve with salmon. However, chardonnay almost always works well with lemon. Certainly we generally like to pair red wines with more bold flavors and the whites with fish however, you also need to take into consideration the flavors of the lemon and pepper in this recipe.
You can make your own lemon pepper seasoning and here is how to do it.
You will need lemon zest and ground pepper in a ratio of one to two (or even if that is what you prefer). Simply spread the mixture of the two on a baking sheet and roast for about a half hour on a low heat until the zest has dried out. This will allow for the flavors to mesh together. Remove from the oven and mash or crush until you reach your desired consistency. You can also add salt or herbs to this as desired.

As mentioned, this recipe is made in a, aluminum foil lined glass baking dish. I also gave an option for alternatively using an ovenproof skillet.
I also mentioned that we are using a lemon pepper seasoning in this recipe.
This is a seasoning that you can make yourself or buy it already made. Look for a lemon pepper seasoning that does not have salt added to it. The lemon and the pepper really give this salmon all of the seasoning it needs.
Here are the ingredients you will need for this Mediterranean Diet Lemon Pepper Salmon
- Salmon Fillets- one pound with the skins removed.
- Olive Oil - 1 tablespoon.
- Lemon Pepper Seasoning - ½ tablespoon.
- Lemon Juice- up to 1 tablespoon or as desired- this is an optional ingredient.
- Sliced Lemon- as desired, also optional.
How to make this Mediterranean Diet Lemon Pepper Salmon
- Preheat your oven to 400. Prep your glass baking dish with aluminum foil. I like to give my foil a quick spray with nonstick as well.
- Places your salmon into the prepped baking dish. You can slice it up before you do if needed to make individual servings.
- In a small mixing bowl , whisk together the oil and seasoning.
- Pour the whisked together ingredients over the salmon. You can use a brush to distribute it over the salmon and even the underside if desired.
- Lightly seal up the foil and place the salmon into the oven. Bake for five minutes and open up the foil. Continue baking for another 7-10 minutes or until the salmon can be flaked. You can place the sliced lemon or lemon juice on top of the salmon when you open up the foil or just before serving.
