    Both of these chicken recipes are pretty much self sufficient once you get them prepared.

    This particular recipe is more like a healthier version of a breaded chicken recipe.

    However, the breading in this chicken recipe is done with a Mediterranean diet friendly wheat bread rather than the usual flour breading. The Parmesan and garlic really lend this chicken a great taste too.

    You may be wondering what do you eat with chicken baked with Parmesan.

    I like something on the side that is less flavorful than the chicken itself. A salad is the perfect side dish to serve with this or to serve this chicken on top of!

    There are also some great wine choices to serve with a chicken baked with garlic and Parmesan cheese.

    Wine that is not too strong or oaked comes to mind for me. I like this baked chicken with garlic with a Chardonnay or Sauvignon Blanc.

    Making this chicken recipe friendly to the Mediterranean diet means having to use bread crumbs that are also friendly to the diet.

    I like the idea of using whole wheat bread crumbs in this recipe. You can make your own whole wheat bread crumbs or easily find whole wheat bread crumbs online.

    There are a few more ingredients that are also essential to this recipe.
    To moisten the chicken and keep the ingredients together, we will use olive oil . Since this is a garlic flavored chicken, we will use fresh garlic (although if really needed, you could sub in minced garlic ).

    Here are some helpful tips for making this Oven Baked Garlic Parmesan Chicken recipe.

    I just mentioned that you can make your own whole wheat bread crumbs or easily find whole wheat bread crumbs online. Also, for the garlic, I use fresh garlic (although if really needed, you could sub in minced garlic ).

    Here are some more great tips for you.

    1. Using a gluten free stuffing rather than whole wheat bread crumbs in an option. I would suggest reading the label to assure that it is friendly to the diet as well.
    2. While you could use the dredging method for breading your chicken breasts, using a zip top bag would also work. Simply place your oil and seasonings in the bag and then add the chicken one piece at a time. Once the chicken is covered you can cover it with the bread crumbs.
    3. Baking your chicken on a baking rack will help get the bottom side crisp like the top side.

    I suggest making this recipe in a glass baking dish.

    A glass baking dish will take longer to heat up but, will stay warmer longer when compared to a metal baking pan. As a result, your chicken will bake more evenly and will have a better chance of not drying out as fast.

    Grated Parmesan cheese is also part of this chicken recipe.

    There are alternatives that you can use instead. Romano or Asiago cheeses are good alternative cheeses to try in this recipe.

    This recipe also calls for seasonings (as expected).

    This can include Italian Seasonings, Salt, and/or Pepper.

    I mentioned that using Mediterranean Diet friendly whole wheat bread crumbs is essential to making this chicken friendly to the diet. You can find whole wheat bread crumbs online. Also, for the garlic, I use fresh garlic (although if really needed, you could sub in minced garlic ).

    This can include Italian Seasonings, Salt, and/or Pepper.

    Oven Baked Garlic Parmesan Chicken

    I suggest making this recipe in a glass baking dish for best results. Also, use skinless and boneless chicken breast fillets.

    Here are the ingredients that are needed in this recipe forOven Baked Garlic Parmesan Chicken.

    • Olive Oil – 4 tablespoons.
    • Garlic– 2 cloves, minced or chopped. That is about 2-3 teaspoons of pre- minced garlic.
    • Whole Wheat Bread Crumbs – 1 cup. you can make your own whole wheat bread crumbs or easily find whole wheat bread crumbs online.
    • Grated Parmesan cheese – ½ cup.
    • Seasonings- 2 teaspoons or as desired. This can include Italian Seasonings, Salt, and/or Pepper.
    • Skinless and Boneless Chicken Breast Fillets- 4-6 depending on the size.

    Here is how to make Oven Baked Garlic Parmesan Chicken

    • Preheat your oven to 350 and prep your baking dish with Parchment Paper . You can give your baking dish a quick spray of nonstick first too if desired.
    • To prepare the chicken we will make a dredging station using two shallow bowls (pasta bowls work great!). In the first bowl, whisk together the oil and the garlic. Then, in the second bowl, use a fork or whisk to mix the bread crumbs and the seasoning .
    • Use a fork or similar utensil to drag the first chicken breast through the first bowl with the oil and garlic. Give the chicken a quick shake over the bowl and then drag it through the second bowl with the flour and seasonings. Be sure to cover the chicken breast and the shake off the excess as needed. Then place the chicken into the prepared baking dish and repeat until all of the chicken is covered. You can discard the excess crumbs and seasoning or you can sprinkle it on top of the chicken.
    • Bake your chicken for 25-30 minutes and it is no longer pink.
