Vegan Banana Oatmeal Muffins
I was happy to learn that muffins made without eggs really can taste good. This recipe is just one example of that.
This recipe reminds me of my recipe for Whole Wheat Banana Muffins.
Both recipes use bananas instead of eggs as a binder. However, this recipe is based more on the oatmeal than flour.

Old Fashion Oatmeal, something that experts agree is healthy for us, is used in place of flour in this recipe. Also, this recipe for muffins is sweetened with maple syrup rather than refined sugar.
I have been asked what oatmeal does to a recipe when it is substituted for flour.
Well, I just touched on how healthy oatmeal is as we are told by the experts. However, oatmeal does more than just make something a bit healthier to eat.
Oatmeal adds more to this muffin recipe than just a healthy aspect.
Adding Old Fashion Oatmeal to this recipe adds a gluten-free element (please double check packaging to make sure). Also, oatmeal makes these chewier in texture, as well as some fiber and flavor.
Tips for making this recipe for No Flour Added and Vegan Banana Oatmeal Muffins.
I just mentioned thatOld Fashion Oatmeal can make these muffins gluten-free. However, you should double check your oatmeal to make sure that it is in fact gluten-free before using it in this recipe.
Here are some more great tips for you.
- I also mentioned above that these muffins are sweetened with maple syrup rather than refined sugar. Feel free to us a maple syrup alternative such as honey (â…” cup) or molasses instead (not blackstrap).
- This recipe calls for using an egg replacement for an equivalence to two eggs. Alternatively, you could add an extra half cup of mashed bananas instead (although that could alter the taste a bit). Other egg alternatives include a half cup of unsweetened applesauce or a half cup of blended silken tofu. You can find all kinds of egg replacers here.
- Always use fresh ingredients for the best results. This is especially true of leavening agents such as baking soda.
- Resist the urge to fill the muffin cups more than Âľ full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.
- Make your muffins more impressive by using an extra large muffin pan or extra small or mini muffin pan.
What makes a good muffin?
Making a good muffin is really all about texture and moisture. Nobody seems to enjoy a muffin that is dry and tough to chew.
The goal of any muffin is to have something light to bite into and enjoyable to chew.
The secret to making good muffins is to resist the urge to overmix your batter. Even though we are not using a gluten flour, overmixing can affect the texture of this recipe.
My best tip is to make sure that you remember to make it as easy as possible to remove the muffins from the muffin pan.
We all know what a pain those muffin pans can be to clean right? So do not forget your muffin liners and/or nonstick .
