A tasty and easy recipe for Whole Wheat Strawberry Muffins.

What I think I like best about this recipe is how healthy it can be to make.

This recipe is friendly to the Mediterranean diet.
However, using ingredient substitutions, this recipe is also friendly to vegan diets as well.

This recipe does remind me of my recipe for Whole Wheat Banana Muffins

That recipe is really about the bananas and the whole wheat flour and how they come together to make a delicious muffin.
In this recipe we are adding the flavor of delicious strawberries.

When you read the ingredients in this recipe you may be wondering what does applesauce replace in a recipe.

This recipe calls for unsweetened applesauce.
Yes, unsweetened applesauce does add the flavor of apples, as you may expect it to do.

The applesauce that is added to this recipe will do a bit more than add an apple flavor to the mix.

In this recipe the applesauce will replace the eggs, or the binder that is used in a muffin recipe to hold the other ingredients together. Also, the applesauce will replace some of the fat that is used to keep the muffin moist for us to enjoy!

This recipe also calls for honey as a sweetener.

The honey used in this recipe will help sweeten the muffins to make them taste better.
In this recipe, the honey is used instead of sugar.

There are substitutes for that honey that you are welcome to use instead.

You can use maple syrup or agave syrup (use ⅔ cup). However, you could easily use regular sugar (1 cup) or a sugar alternative that measures 1:1 with sugar (also 1 cup).

Tips Whole Wheat Strawberry Muffins

I just mentioned that we will sweeten these muffins using honey as a sweetener. Alternatives to using honey include maple syrup or agave syrup (use ⅔ cup). However, you could easily use regular sugar (1 cup) or a sugar alternative that measures 1:1 with sugar (also 1 cup).

Here are some more great tips for you.

  1. I like to prepare my strawberries and then freeze them before adding them to this recipe. This helps them keep their shape a bit better when baking (in my opinion). You can skip freezing your strawberries if desired.
  2. If you are using fresh, but frozen strawberries straight out of the bag that you purchased at your local grocery store please check the ingredient label. Make sure that the strawberries are the only ingredient in the bag rather than a bunch of sugar etc.
  3. Resist the urge to fill the muffin cups more than ¾ full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.
  4. Make your muffins more impressive by using an extra large muffin pan or extra small or mini muffin pan.
  5. Why just use strawberries in this recipe? Other berries would probably work well in this recipe. I am a fan of blueberries in this recipe.

There are some differences between using whole wheat flour and using all purpose flour.

That is, there is a difference in the baking results that you can expect to notice when you use whole wheat rather than the usual all purpose flour. But, you can still get a great tasting muffin, as you will see in this recipe.

Whole wheat flour is a more fibrous (and healthier for many of us as a result) flour.

That is, it has been processed less and as a result, whole wheat flour has held on to its fiber. The result of holding on to this fiber is a more dense result, especially in muffins and breads. Personally, I like this as the fiber causes the bread and muffins to make me feel fuller faster and for a longer duration of time. You could easily use whole wheat white flour if you prefer.

Also included in this recipe is a neutral oil.

This means that the oil will not add any substantial flavors (such as olive oil would add).
Acceptable neutral oils in the Mediterranean diet include avocado oil, safflower oil, and Grapeseed oil.

  • Whole Wheat Flour- 3 cups.
  • Baking Soda- 2 teaspoons.
  • Ground Cinnamon- 1 teaspoon.
  • Unsweetened Applesauce- 1 ½ cups. .
  • Honey- ¾ cup. Alternatives to using honey include maple syrup (¾ cup) or agave syrup (use ⅔ cup). However, you could easily use regular sugar (1 cup) or a sugar alternative that measures 1:1 with sugar (also 1 cup)
  • Neutral Oil- ½ cup plus one tablespoon. I mentioned above that acceptable neutral oils in the Mediterranean diet include avocado oil, safflower oil, and Grapeseed oil
  • Vanilla Extract- 1 teaspoon.
  • Strawberries- 2 cups. Prepare your strawberries by hulling them and then slicing or chopping them.

How to make this recipe for Whole Wheat Strawberry Muffins.

  • Prepare your strawberries as indicated above (hulled and sliced).
  • Preheat your oven to 350. Also, prep your muffin pan using muffin liners and/or nonstick .
  • In a mixing bowl , use a fork or whisk to mix together the flour, baking soda, and cinnamon.
  • Next, in a large mixing bowl, blend together the applesauce, honey, oil, and vanilla extract.
  • For the next step, we will add the dry ingredients from the first bowl (flour etc) to the large mixing bowl with the applesauce mixture. Do this by adding half of the dry ingredients at a time, stirring gently between additions.
  • Lastly, use a rubber spatula (or similar utensil) to gently fold in the strawberries.
  • Fill your prepared muffin cups ¾ full. Bake for 25-30 minutes or until a toothpick comes out clean. Allow these muffins to cool before serving.
