Both muffin recipes have whole wheat flour in them and are friendly to the Mediterranean diet. However, this lemon muffin recipe has a wonderful citrus flavor to it.

When it comes to making light and fluffy anything that you bake it has a lot to do with the air that is introduced into the batter. Leavening agents are the secret ingredient that makes these yummy muffins so light and fluffy.
We are going to use two kinds of leavening agents in this muffin recipe.
Both Baking Powder and Baking Soda are added to this recipe to help release the carbon dioxide and thus, increase the volume of these muffins while making them lighter.
While they both serve a similar purpose, the baking powder will help maintain the flavor and give the leavening a sort of boost.

- In a large mixing bowl, use a whisk or fork to mix together the flours, baking powder, baking soda, chia seeds, and lemon zest.
- Next, in another mixing bowl, whisk together the sugar, eggs, milk, canola oil and lemon juice.
- Slowly add the ingredients from the second bowl to the first bowl. Do this by adding half at a time and whisking the ingredients gently between additions. Do not overmix, use your whisk to mix until until the lumps seem to be gone and the ingredients are blended.
- Bake the muffins for 18-20 minutes or until a toothpick comes out clean. Allow the cool a bit before serving.
