About this recipe for carrots roasted in maple syrup.

This is a simple vegan and Mediterranean diet recipe for oven roasted carrots.
The carrots are sweetened with maple syrup.

My recipe features whole carrots.
However, you can use sliced carrots or the carrots of your choice.
Your carrots should be scraped or cleaned before adding them to this recipe.

Ingredients needed to make oven roasted carrots with maple syrup.

  • Carrots- 1 ½ pounds. The carrots should be scraped or cleaned. If they are large carrots you can also slice them down. Baby carrots can also work in this recipe.
  • Olive Oil- 3 tablespoons, divided. Feel free to sub in another oil of choice. Non vegans can use melted butter.
  • Maple Syrup- 3 tablespoons. Non vegans can use honey instead (you may need to use more honey as per taste).
  • Salt and seasonings as desired.

  • Preheat your oven to 400 and prep a rimmed baking sheet for nonstick. Place the carrots in a large bowl and add one tablespoon of the oil to the bowl (this is actually easier if you drizzle the oil over the carrots). Toss the carrots in the oil. Then evenly spread the carrots on the prepped sheet. Bake for 10 minutes, stir the carrots around, and then bake for another five minutes.
  • In another bowl, use a whisk or a fork to blend together the remaining oil, maple syrup and any desired seasonings. Then carefully pour this mixture over the carrots, stirring them around to evenly coat the carrots. Evenly spread out the carrots and bake for another five minutes. If you are using baby carrots you may need adjust the baking time as needed.
