    This recipe is for anyone asking what is vegan meatloaf.

    I get that it may sound confusing to call something 'meatloaf' when there is no 'meat' in it.
    But, when you follow a vegan or vegetarian lifestyle, you get use to the idea of using common names for recipes that call for alternative ingredients.

    Vegan meatloaf can be made with a variety of alternatives to meat.
    Like with so many vegan meat ideas, you learn how to use other ingredients in ways that they can resemble meat.
    In this recipe, that would be lentils.

    You may also be wondering what is vegan meatloaf made of.

    I just mentioned that we are using lentils instead of meat in this recipe.
    Along with the other ingredients, the lentils help us 'fake' meat but, without really adding meat.

    Meatloaf also needs a 'binder' ingredient to hold everything together.
    That binder ingredient is usually eggs.
    For this recipe we will use a vegan egg replacement instead of the real thing.

    Tips for making meatloaf.

    This recipe calls for cooked lentils. Feel free to use packaged already cooked lentils to make your meatloaf with.

    Here are some more great tips for you.

    1. Breadcrumbs are used in this recipe. You can alternatively substitute oats for part or all of the breadcrumbs if desired. You may need to adjust other ingredients such as the flaxseed egg.
    2. Adding additional vegetables, such as mushrooms, can also be done. You may need to adjust other ingredients such as the flaxseed egg if you do so.
    3. This recipe calls for a tomato glaze. However, you can simply use a vegan barbecue sauce if you would rather.

    How to make Vegan Tomato Glaze.

    The tomato glaze is placed on top of the meatloaf just before placing the meatloaf into the oven for baking. Using a glaze adds both flavor and moisture to this recipe.

    For the glaze, simply whisk following ingredients .

    • Tomato Paste- 3 tablespoons.
    • Balsamic Vinegar- 1 tablespoon.
    • Maple Syrup- 2 tablespoons.

    How to store leftover meatloaf.

    Leftover meatloaf should be stored in an airtight container in the refrigerator.
    If properly stored, it should keep for four to five days.

    About this vegan meatloaf recipe.

    This is a recipe for meatloaf that is made without adding meat or dairy ingredients.
    We will use vegan alternative ingredients instead.

    This recipe is made using lentils.

    The lentils should be cooked before adding them to this recipe.
    Simply follow the directions on the packaging to learn how to cook the lentils.

    Ingredients needed to make vegan meatloaf.

    • Flaxseed- 1 tablespoon.
    • Water- 4 tablespoons.
    • Olive Oil- 2 tablespoons.
    • Garlic- 2 cloves chopped or minced.
    • Onion- 1 medium sized yellow desired. The onion should be diced.
    • Carrot- ½ cup chopped. That is about one carrot.
    • Lentils- 2 ½ cups. The lentils should be already cooked.
    • Walnuts- ½ cup chopped.
    • Breadcrumbs- ¾ cups (please make sure they are vegan).
    • Balsamic Vinegar- 1 tablespoon.
    • Soy Sauce- 2 tablespoons.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
    • Tomato Glaze- recipe above.

    Vegan Meatloaf with Lentils

    How to make Vegan Meatloaf with Lentils

    • Prepare a loaf pan with parchment paper or method of choice.
      Make the vegan egg by whisking together the flaxseed with the water. Set the vegan egg aside.
    • Heat the olive oil in a saucepan on medium heat for two minutes. Add the garlic to the pan and heat for two minutes, stirring as needed. Then add the onion and carrots and cook for another four to five minutes or until the onion becomes translucent. Remove this from the heat.
    • Preheat the oven to 350. Transfer the the sautéed ingredients to a food processor or large mixing bowl (using an immersion blender). Add two cups of the cooked lentils and process until combined and paste is formed. Then mix in the chopped walnuts.
    • Place the mixed ingredients in a large bowl and stir in the remaining ingredients (remaining lentils, breadcrumbs, flaxseed egg, vinegar, soy sauce and seasonings as desired). When you are able for form the mixture into a shape, press it into the prepared loaf pan. Top the meatloaf with the glaze and bake for 35-40 minutes or until the edges begin to brown. Allow to set for at least five minutes before serving.

    Ingredients

    • 1 tbsp Flaxseed

    • 2 Garlic
