    About this Vegan Applesauce Muffins

    This vegan muffin recipe is based upon a standard muffin recipe.
    However, we are substituting ingredients for the dairy ingredients that usually go into a muffin recipe.

    We are using applesauce as both an ingredient replacement as well as for flavor.
    Because we are not adding butter, the applesauce will help to keep the moisture in these muffins.
    The applesauce will also help with binding the ingredients together since there are no added eggs in this recipe.

    Ingredients needed to make vegan muffins

    • Flour- 2 ½ cups all purpose or whole wheat.
    • Ground Cinnamon- 1 teaspoon.
    • Ground Cardamom - ½ teaspoon.
    • Baking Powder- 2 teaspoon.
    • Baking Soda- ½ teaspoon.
    • Applesauce-1 cup.
    • Brown Sugar- ¾ cup.
    • Vanilla Extract- 1 teaspoon.
    • Almond Milk-½ cup.
    • Apple- 1 red, peeled and diced (average sized, Jonagold, Honeycrisp, or Pinklady if possible ).
    • Optional- chopped nuts such as walnuts mixed in or brown sugar (3 tablespoons) and cinnamon (1 teaspoon) for a topping.

    How to make Vegan Applesauce Muffins.

    • Preheat the oven to 350 and prep a muffin pan well for nonstick.
    • In a medium bowl, use a whisk or a fork to mix together the flour, cinnamon, cardamom, baking powder, and baking soda.
    • Next, in a mixing bowl, beat together the applesauce with the brown sugar until blended. Then add the almond milk and the vanilla extract. Stir this until blended. Then stir in the dry ingredients from the first bowl to the mixing bowl, stirring until just blended. Lastly, fold in the apple chunks and any optional nuts.
    • Top with optional cinnamon sugar and then bake the muffins for 20 to 22 minutes, or until an inserted toothpick comes out clean.
    • Remove the muffins from the oven and allow them to cool to room temperature for 10 minutes before removing them from the muffin pan.

    Ingredients

    • 2 ½ cups Flour
