You may be wondering, what does adding applesauce to muffins do.
Adding applesauce to a baked recipe such as this one is a great idea especially for vegan baking.
Applesauce does more than just add flavor to a recipe.
Here is why we are adding applesauce to this vegan muffin recipe.
The applesauce is used in place of the fat, such as oil or butter, to add moisture.
Also, the applesauce adds all of the nutrients associated with apples, such as fiber.
People ask does applesauce change baked taste.
Certainly, applesauce does add apples and thus, the apple taste.
It also adds the sugar that comes naturally in apples.
Here is what else the applesauce does to baked goods.
Applesauce is also an egg replacement.
This means that while the applesauce can be used as a binder of other ingredients, the texture of the baked good may be a bit different as a result.
Tips for making vegan muffins.
This recipe for muffins can be made gluten free.
Simply use a gluten free all purpose flour that measures 1:1 with regular flour (and check the packaging to see if it needs an additional binder).

- Prep your muffin pan well. This means using both muffin cups and nonstick spray for example.
- Always use fresh ingredients for the best results. This is especially true of leavening agents such as baking powder and baking soda.
- Resist the urge to fill the muffin cups more than ¾ full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.

About this Vegan Applesauce Muffins
This vegan muffin recipe is based upon a standard muffin recipe.
However, we are substituting ingredients for the dairy ingredients that usually go into a muffin recipe.
We are using applesauce as both an ingredient replacement as well as for flavor.
Because we are not adding butter, the applesauce will help to keep the moisture in these muffins.
The applesauce will also help with binding the ingredients together since there are no added eggs in this recipe.
