This recipe is made with crispy rice cereal.
You can really use any ‘crispy rice cereal‘ to make this recipe.
Just make sure that the cereal is vegan too.
This recipe also calls for peanut butter.
Please make sure that you are using vegan peanut butter.
Feel free to use a no added sugar peanut butter as well.

I always tell people that something is vegan as long as the ingredients in it are vegan.
This is also true of rice cereal treats.
Cereal treats are usually made with marshmallows.
Regular marshmallows are not vegan however, you may be able to use vegan marshmallows (I have not tried vegan marshmallows).

You can use a mini-muffin pan to set the rolled balls in. This will make it easier to transfer the balls and also to keep them apart from one another.

- Lining each of the mini-muffins is also recommended to make clean up easier for you. You can find mini muffin liners here.
- Make this treat a cocoa flavor. Simple add a tablespoon of unsweetened cocoa (you may need to adjust the other ingredients to keep this moist).
- Adding a few drops of food coloring can make these festive. Please take caution when working with the food coloring as needed.

This is a vegan sweetener that is also helps with binding the other ingredients together.
You can use an alternative to the rice syrup.
Agave syrup, barley malt syrup, and corn syrup are often used.
You may need to adjust the amount that you use accordingly.
How to store rice cereal balls.
These treats should be stored in an air tight container.
If properly stored and refrigerated, they should keep for up to a week.

Vegan Rice Krispie Truffles
Ingredients needed to make Vegan Rice Krispie Truffles
- Vegan Peanut Butter– ½ cup.
- Rice Syrup– ½ cup. I mentioned that Agave syrup, barley malt syrup, and corn syrup are often used.
- Rice Cereal– 2 cups, crispy.
- Dark Chocolate (baking or chips)- ¼ cup.
How to make Vegan Krispie Treats.
- Line a rimmed baking sheet with parchment paper. I mentioned above that you can alternatively a mini-muffin pan lined with mini muffin liners.
- In a mixing bowl, combine together the peanut butter, syrup, and cereal. I start my mixing with a large spoon and then when I am able to, I use my hands as this makes it easier. You can spray a vegan nonstick on your hands to help prevent them from getting too sticky.
- Use a small scoop such as a melon ball scoop to scoop out each individual ball. Roll each ball between your hands to get them to stick together firm. Then place each of the balls onto your prepped area.
- Melt the chocolate as indicated on the packaging. I use a microwave safe bowl to melt my, stopping every 30 seconds to stir until melted.
- Drizzle the melted chocolate over the cereal balls.
- Refrigerate the balls for at least 30 minutes to set before serving.
