- Make sure that you cashews have been softened and drained.
- Place the cashews, olive oil, lemon juice, apple cider vinegar, chives, and nutritional yeast in a food processor.
- Process for about a minute then stop the food processor to scrape down the sides. Season as desired and continue to process until smooth. You may need to stop the processor as needed to scrape down the sides and season as needed.
- Refrigerate the spreadable cheese in an airtight container before serving to thicken. Serve with dipping vegetables, crackers, or even chips as desired.
