    I prefer the rolled or old fashion oats for a baked recipe such as this one.

    How to prepare apples for baking.

    Choose apples that are firm and are free from bruises, stickers, and other marks.
    Wash or scrub the outside of the apples as you would normally do then chop the apples into bute sized pieces..

    Really, using a sweet apple works in this recipe for flavor however, I suggested above that two kinds of apples.

    Using a baking apple, in addition to the sweet apple , works in this recipe because they are able to hold their shape better and thus, you get those tasty apple chunks. Good baking apple choices for this recipe include Fuji, Gala, Honey Gold, Jonathan, and Granny Smith.

    Ingredients needed to make Vegan Baked Apple Oatmeal

    • Apples- 2 average sized apples chopped into bitesize pieces. This is about two cups. I like using a baking apple and a sweet apple.
    • Almond Milk- 2 cups.
    • Flaxseed Meal- 1 tablespoon.
    • Rolled Oats- 2 cups.
    • Pecans- ½ cup chopped.
    • Baking Powder- 1 teaspoon.
    • Ground Cinnamon- 2 teaspoons.
    • Vegan Butter- 1 tablespoons.
    • Brown Sugar- ½ cup.
    • Apple Sauce- ¼ cup. Alternatively, you can use maple syrup.
    • Vanilla Extract- 2 teaspoons.

    How to make healthy vegan baked apple oatmeal.

    • Prepare your apples as indicated above.
    • Preheat your oven to 350 and prep a square baking dish well for nonstick.
    • In a medium bowl, combine together the almond milk and the flaxseed meal. Set this aside while you work.
    • Next, in another bowl, use a fork to mix together the rolled oats, pecans, baking powder and the cinnamon.
    • Cream together the vegan butter with the brown sugar. Then add the dry ingredients from the last step (oatmeal etc.) to the bowl and gently stir. Add the almond milk and flaxseed mixture, the apple sauce, and vanilla extract and mix until just blended.
    • Fold in the chopped apples and then you can transfer the mixture to the prepped baking dish.
    • Bake for 35 to 40 minutes or until oats are well set and golden brown around the edges. Then allow this to it cool a bit before serving.
