This is a simple recipe for a double chocolate cake.
Both unsweetened cocoa and chocolate chips are used to make this double chocolate loaf cake.
This recipe is vegan, dairy free, and nut free.
It takes about ten minutes to make the cake. Baking the loaf cake should take about an hour.
Ingredients needed to make double chocolate loaf cake.
- Flax Seeds and hot water. Used as an egg replacement. Eggs (3) or another replacer can be used instead.
- Flour. All purpose was used to make my loaf cake.
- Baking Soda. Adds air to this recipe to make the cake fluffy.
- Unsweetened Cocoa Powder. Adds both flavor and color to this recipe.
- Brown Sugar. Add sweetness and richness to the flavor.
- Vegetable Oil. You can alternatively use canola oil or another neutral oil.
- Vanilla Extract. Added to help balance out the flavors.
- Coffee. Brewed coffee is added for moisture and flavor. Vegan milk can alternatively be used.
- Chocolate Chips. Vegan chocolate chips are recommended to make a vegan loaf cake.
How to make Quick Double Chocolate Loaf Cake
- Preheat your oven to 325 and prep a loaf pan for nonstick. I light to use parchment paper that is lightly sprayed with nonstick.
- Prepare you vegan egg by mixing together the flax seeds with the hot water. Set this bowl aside for about five minutes or until a get forms.
- Meanwhile, in a medium bowl, use a whisk to mix together the flour, unsweetened cocoa powder and the baking soda.
- Next, in a mixing bowl, beat together the oil with the brown sugar until combined. Add the vegan egg, coffee, and vanilla to the bowl and mix until just combined. Then add the dry ingredients and mix until just combined. Lastly, fold in the chocolate chips.
- Evenly distribute the ingredients in your prepared loaf pan and bake for 55-60 minutes. If you are using the toothpick test, do so in more than one location on the loaf as the melting chocolate chips can give you a false result.
- Allow the loaf cake to sit in the pan before transferring to a cooling rack to finish cooling.
Expert Tip👉 When lining your loaf pan with parchment paper, allow for two opposite sides of the parchment to overhand the sides of the loaf pan. This will make it easier for you to transfer the loaf cake for cooling.
