Like with many baked goods, muffins are usually made with with ingredients such as eggs, milk, and butter. These ingredients provide important roles in the moisture and the binding of ingredients.

How to make Vegan Chocolate Chip Muffins
Yields 12 muffins
Preparation Time active time 20 minutes | baking time 25-30 minutes
- Preheat you oven to 350. Prep your muffin pan(s) well for nonstick.
- In a medium bowl, use a whisk or a fork to combine together the flour and baking powder.
- Next, in a mixing bowl, beat together the oil and the sugar until creamy. Then mix in the apple cider vinegar, oat milk and vanilla extract.
- Stir in the dry ingredients from the first bowl into the wet ingredients in the mixing bowl and mix until just combined. Then fold in your chocolate chips. You can add additional chocolate chips as desired the muffins before baking.
- Bake these muffins for 25-30 minutes or until they begin to brown around the edges or a toothpick comes out clean. Allow the muffins to cool in the pan for 10 minutes before removing so that they can finish baking.
Expert Tip👉 While your muffins are baking, resist the urge to open the oven door (during the first 20 minutes) while baking as this can cause the muffins to flatten.
