Yummy Vegan Lemon Bars with Shortbread Crust

Even better, this bar recipes actually a simple one to make.

Did you try Vegan Chocolate Granola Bars

That granola bar recipe is another tasty vegan bar recipe to make. Both this lemon bar and that granola bar are nice ideas for snacks or desserts.

Confused about which vegan milk is the best to use in your recipe?
Here is what you need to know about choosing the right vegan milk..

This vegan recipe is based upon a classic lemon bar recipe.

A classic lemon bar recipe is a two layer bar recipe. That is, there is a shortbread base or crust and a lemony filling on top.

This recipe also has a shortbread crust that is topped with that lemony filling.

The shortbread crust is a three ingredient crust that is made with gluten free flour. It is also made without added sugar.

What makes lemon bars so good?

The filling that is used is thick and creamy. While it is not too sweet, this filling is lush and delicious.

These bars taste good because of how well the layers work together.

When you bite into these bars you get both the creamy flavorful lemon topping and the crunchy shortbread crust. These textures work well together in making the perfect vegan treat.

Tips for making vegan lemon bars.

These bars are easy to make. The trick to making these is to first let the crust set and cool before adding the topping.

Here are some more great tips for you.

    1. The crust in this recipe uses a gluten free all purpose flour. When selecting an all purpose flour, select one that measures 1:1 with regular all purpose flour.
    2. The crust also uses vegan butter. If you cannot find vegan butter, you can try using oil with adjustments as needed for texture.
    3. Also, erythritol is used to sweeten the crust. Maple syrup can be used instead however, you will need to adjust the amount needed as maple syrup is both sweeter to taste and also in a liquid form.

How do you serve lemon bars?

These lemon bars taste good when they are just cut into squares and served. You can simply sprinkle some vegan powdered sugar on top if desired.

However, there are some ways to make these bars even better.

Thinly sliced lemons placed on top of these bars can make them look great. For added color you can add blueberries or sliced strawberries.

How to store vegan lemon bars.

These bars should be covered and refrigerated. If properly stored, these lemon bars should keep for up to a week.
