How to make a Vegan Shortbread Crust.
To make this crust you will need:
- Vegan Butter- ½ cup.
- Erythritol- ½ cup.
- Gluten Free Flour- 1 cup
How to make this crust.
- Preheat your oven to 350 and prep a square baking pan with parchment paper that overhangs the edges.
- Combine the ingredients together until you are able to form a ball.
- Press the ball of ingredients into the prepped baking pan .
- Bake the crust until golden, 10-12 minutes.
Ingredients needed to make lemon filling.
- Lemon Juice- ¾ cup. Fresh lemon juice is preferred. You will need between three and four lemons depending on the size of the lemons.
- Erythritol- 1 ½ cups. Feel free to use the alternative of your choice as long as it is granular and measures like erythritol.
- Coconut Milk- 1 ¼ cups. Use a full fat coconut milk for best results.
- Cornstarch- 6 tablespoons. This is thickener for the bars to help them set.
- Turmeric- as needed for color.
- Optional- Vanilla extract for flavor, ½ to one teaspoon. Powdered sugar or sugar free sugar for topping.
How to make these Vegan Lemon Bars with Shortbread Crust
- Prepare the crust as indicated and allow it to cool while you make the topping.
- Preheat the oven to 350.
- In a medium saucepan over medium heat, combine the lemon juice, coconut milk, cornstarch, and sweetener. Heat this until thickened, whisking continually, until thickened and the sweetener has fully dissolved. You can stir in any extract flavoring and turmeric as needed for color .
- Transfer the filling to the prepared crust, evenly spreading it over the crust.
- Place the bars into the preheated oven and bake for thirty minutes or until the center is set (you can check the center with a toothpick to check).
- Remove the lemon bars from the oven and allow it to set at room temperature for a half hour. Then transfer it to the refrigerator overnight before cutting into bars and serving.
