    While this gingerbread loaf is not fully leavened like a cake, that is it is rather dense, it certainly can be enjoyed as a dessert. But, you could easily enjoy this loaf as a bread for breakfast or brunch if desired as well.

    Tips for Making Spiced Gingerbread Loaf.

    As an egg substitute, we will be blooming flax seeds in warm water. You can also use an alternative egg replacement if you prefer.

    Here are some more great tips for you.

    1. While this recipe uses a 9X5" loaf an you can alternatively use mini loaf pans for individual sized loaves. You may need to make adjustments as needed when baking however.
    2. This is a recipe that can benefit from double prepping the pan for nonstick. I use parchment paper that is lightly sprayed with nonstick spray.
    3. When checking to see if you loaf is done baking, it is best to use the toothpick test. This is because it may be difficult to detect if your loaf has browned from baking.

    How to store Gingerbread Loaf

    This loaf should be stored in an airtight container and refrigerated.
    This loaf can also be frozen.

    This is a simple recipe for a spice gingerbread loaf that is vegan.
    It is based on a standard gingerbread loaf recipe.

    This recipe uses vegan alternatives for dairy ingredients.

    A flax seed egg is used instead of a regular dairy egg. Almond milk is also used in this recipe as well.

    Ingredients needed to make Spiced Gingerbread Loaf


    • Flax Seeds. Combined with water to make an egg substitute needed to bind the ingredients together.
    • Flour. All purpose flour is used.
    • Baking powder. Added for leavening.
    • Cinnamon, Nutmeg, Ground Ginger, and Cloves are spices added to enhance the flavor of the loaf.
    • Bananas. Used very ripe bananas that can be easily mashed.
    • Molasses. Molasses adds flavor, color, and sweetness to this loaf.
    • Brown Sugar. Added for sweetness.
    • Vegetable Oil. Used to add moisture to the loaf.
    • Vanilla Extract. Added to help enhance the other flavors.
    • Almond Milk. Added to even out the texture of the batter.

    How to make this Vegan Spiced Gingerbread Loaf Recipe.

    Prep Time: 15 minutes
    Cook Time: 40 minutes
    Servings: 8 slices

    • Start by preheating your oven to 350. Double prep a loaf pan for nonstick. I like to use parchment paper that is lightly sprayed with nonstick in a recipe such as this one.
    • Prepare the flax egg by by combining the flax seeds with warm water as it will need about five minutes to thicken up.
    • In a medium bowl, use a whisk to mix together the flour, baking powder, cinnamon, ginger, nutmeg, and cloves.
    • Next, in a mixing bowl, beat together the mashed bananas, molasses, brown sugar, and vegetable oil until blended. Then add the flax egg from the second step along with the vanilla extract.
    • For the next step we will add the dry ingredients from the first bowl to the mixing bowl with the other ingredients. Do this by adding half of the dry ingredients, gently stir, and then stir in the milk. Add the remaining dry ingredients and mix until just combined.
    • Bake the loaf for 40-45 minutes or until a toothpick inserted into the center of the loaf comes out clean.
    • Allow the loaf to site for ten minutes in the loaf pan before transferring it to a wire rack to finish cooling.

    Expert Tip👉 When lining your loaf pan with parchment paper, make sure that there is enough paper overhanging the sides of the pan. This will help you easily remove the loaf from the pan for further cooling.

    Ingredients

    • 2 tbsp Flax Seeds
