    For those of us who grow zucchini or find a great selection at a farmer's market or grocery store, this is a great recipe idea.

    I like that this is different than the usual lettuce salad that we enjoy so often.

    This recipe is for anyone asking what is the best way to eat zucchini

    Really, when there is an abundance of freshly grown zucchini, there are a lot of options for using it. Most folks seem to like to cook, bake, or add zucchini to a bread recipe.

    There are benefits to adding zucchini to a salad.

    Zucchini is a low calorie, low carb, and fiber rich member of the squash family.
    What you may not know is that zucchini is loaded with vitamin C and even has a bit of protein in it!

    People ask can you eat zucchini raw in a salad.

    This is a common question to ask ask as we most commonly see zucchini baked or cooked.
    However, you can eat zucchini raw, just like its cucumber relative.

    This recipe calls for medium sized zucchini.

    This is because large zucchinis tend to be more bitter which may not be a great thing when eaten raw. Small zucchini is often too soft for putting through a mandolin for shaving or slicing.

    Tips for making this shaved zucchini salad

    So I just mentioned that you should use medium sized zucchini.
    This is because medium zucchini have both the flavor and the texture that are useful for this recipe.

    Here are some more great tips for you.

    1. This salad calls for arugula for added flavor. Feel free to use a spring mix, which usually has arugula in it, or a lettuce of your choice.
    2. Feta cheese is used in this recipe. You can use the vegan cheese of your choice or sub in another cheese instead.
    3. I have included a lemon olive oil dressing in this recipe. You can omit this and use the dressing of your choice if your would prefer to.

    How to prepare zucchini for this recipe.

    I always soak or scrub my zucchini if I will not be peeling the skin off. You can use prepare the skin as preferred or use a peeler to remove it.

    The zucchini should be shaved or cut into strips.

    I use a mandolin to slice it into 1/16- ⅛th" slices.
    You can alternatively use a vegetable peeler.

    This zucchini salad is best when served fresh.

    However, you can store your leftover salad in the refrigerator for about a day covered. After a day the vinaigrette can break down the zucchini.

    How to make lemon dressing.

    The lemon dressing offers a nice flavor balance to the zucchini and the arugula.
    You can personalize the dressing by adding seasonings as desired.

    To make the dressing use a whisk or a dressing shaker to combine the following ingredients.

    • Lemon Juice- 2 tablespoons.
    • Olive Oil- ⅓ cup.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

    Ingredients needed to make shaved zucchini salad.

    • Dressing- as prepared above.
    • Zucchini- 3 medium sized. Cleaned a desired, shaved or peeled thin.
    • Arugula or Spring Salad- ¾ cup or as desired. I suggest cleaning and keeping the leaves intact or bite sized.
    • Corn kernels- ½ cup or half of a small can.
    • Feta or Vegan Cheese- ½ cup.
    • Walnuts, Pecans, or Pine Nuts- ¼ cup.

    How to make Zucchini Salad

    • Prepare the dressing as indicated above. Shave in a mandolin or thinly peel using a vegetable peeler, the zucchini. The strips should resemble ribbons. Place the zucchini into a large serving bowl.
    • Add the arugula or lettuce to the bowl. Then drain the corn and add it to the bowl.
    • Drizzle the dressing over the ingredients in the bowl and toss until the ingredients are coated. You can add additional seasonings as needed to taste.
    • Top the salad with the remaining ingredients and serve.
