Mediterranean Diet Potato Salad

A perfect lower fat version of a favorite potato side dish.
I like that this potato salad is not just for summer picnics and barbecues.

Have you tried my Mediterranean Diet Roasted Potatoes?

That recipe is for a lower fat roasted potato dish that is also Mediterranean diet friendly.
This recipe is really about a Mediterranean version of a favorite mayonnaise salad side dish.

This recipe is for anyone asking how do you make potato salad from scratch.

Technically, the typical potato salad usually has a few main ingredients along with some seasonings.
Those ingredients include cooked potatoes, mayonnaise, and hard boiled eggs.

This potato salad recipe has been modified to be friendly to the Mediterranean diet.

Yes, we will use actual potatoes as this would not be potato salad without that main ingredients.
However, we are going to use friendlier ingredients that are lower in fat and have little processing.

So you are probably wondering which type of potato is best for potato salad.

It is true that not every potato is the same. The truth is that certain potatoes are best for baking with while others work best in recipes such as this potato salad recipe.

I suggest using a smaller potato rather than a larger, starchy, and more meaty potato (like russet) that is best for baking with.
Look for a ‘waxy’ potato as they hold their shape well when both boiled and added to a recipe such as this one. Waxy potatoes include new potatoes and red potatoes.

Tips for making potato salad.

I just mentioned that the best potatoes to use in a potato salad include the waxy potatoes. Good choices for potatoes that you can use in this recipe include new potatoes and red potatoes.

Here are some more great tips for you.

  1. Make this potato salad more like an old fashion potato salad. Simply add a tablespoon or so of regular yellow mustard.
  2. This recipe calls for pickles which give the salad that tart balance with a bit of seasoning. Feel free to sub in a quarter cup of relish if you prefer that sweet balance to that tart balance (or if that is what you have on hand).
  3. This recipe does not include any kind of preservative. However, this potato salad should be able to keep the refrigerator for up to five days when stored correctly.

Here is how to prepare potatoes for potato salad.

As mentioned, using a ‘waxy’ potato rather than a starchy one is preferred.
You can peep the potatoes or simply clean them for this recipe.

Cooking the potatoes is rather easy to do.

Simply place the potatoes with a bit of salt in a large pot with water,
Bring the water to a boil and then simmer for about 15 minutes when the potatoes become a bit tender, yet mostly firm.
Remove the potatoes from the water and allow them to cool before chopping them up.

Yes, you will need Mediterranean diet friendly mayonnaise for this potato salad.

Thankfully, I do have a recipe for Mediterranean diet friendly mayonnaise that you can use.
