This recipe is for anyone asking how do you make potato salad from scratch.

While this recipe is for a vegan potato salad, you could easily make this a nonvegan homemade potato salad my using regular mayonnaise. This homemade potato salad recipe is good either way.

Like with all potato salad, this recipe does include potatoes.

This potato salad also contains many of the same ingredients that you would also expect from a potato salad (chopped onions, etc). Really, the main difference is that the mayonnaise does not contain eggs and is thus, vegan.

Everyone seems to want to know, is it better to boil or steam potatoes for potato salad.

Some people swear by using roasted potato to make potato salad.
In my opinion, this is suppose to be an easy recipe however, feel free to roast your potatoes if you think it will make your potato salad better.

For this potato salad recipe you really can boil or roast your potatoes.

To roast your potatoes, simply chop them up into small pieces and toss them in a bit of olive oil and seasoning. Then roast them in a 400 degree oven on a rimmed baking sheet until toasted (about a half hour). Be sure to stir them around occasionally to make sure that they roast evenly.

I just mentioned that potato salad is usually made with potatoes that are boiled. However, you could choose to make your potato salad with potatoes that have been roasted. The big difference is that you will chop the potatoes before cooking them if you are roasting.

However, I get the need to know exactly what goes into what you eat so I am including this simple recipe for making your own vegan mayonnaise.

Use an immersion blender for best recipes when combining these ingredients until creamy.

  1. Olive Oil– ½ cup plus one tablespoon.
  2. Unsweetened Vegan Milk– ¼ cup. Soy Milk works well in this recipe.
  3. White Vinegar– 1 teaspoon.
  4. Mustard (or maple syrup)- 1 teaspoon or as desired for flavoring.
  5. You can also add a bit of salt or seasonings as desired.

You can use store-bought vegan mayonnaise or the recipe that I provided above for homemade vegan mayonnaise.

Also mentioned was that ‘waxy potatoes’ work best as they are able to hold up better in a salad.

Waxy potatoes include red potatoes or white potatoes. Some folks like to use Yukon gold potatoes.

  • Potatoes- 1 pound. This is about four average sized potatoes however, it will depend on the size of the potatoes that you are using. The potatoes should be scrubbed if keeping the skins on or can be peeled after boiling.
  • Carrot- â…“ cup chopped.Cooking or steaming it is optional.
  • Red Onion- ½ cup chopped.
  • Celery- 1 cup chopped (about two to three sticks).
  • Vegan Mayonnaise– 1 cup.
  • Mustard– ¼ cup.
  • Olive Oil– 1 tablespoon.
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

How to Make Vegan Potato Salad

  • Cook your potatoes either by roasting them (recipe above) or boiling the potatoes. To boil potatoes, bring a large pot of water with a pinch of salt to a boil. Cook the potatoes until soft, about 15-20 minutes. Allow the potatoes to cool before peeling and chopping.
  • Meanwhile, in a medium bowl, combine together the chopped carrots, onions, and celery.
  • In another bowl, use a whisk or fork to blend together the vegan mayonnaise, mustard, and olive oil.
  • Place the cooked, cooled, and chopped potatoes into a large bowl. Stir in the other ingredients until the potatoes are well covered and the ingredients are mixed. Season as desired. Cover the bowl and refrigerate for at least an hour before serving.
