    This is the 'vegan' version of a popular baked feta and pasta dish that has been very popular on social media. However, this recipe for feta pasta is a vegan version.

    I have always wondered is the Tik Tok pasta good.

    This recipe for baked pasta was inspired by a famous social media recipe.
    In that recipe, non-vegan (that is the real stuff), feta cheese was used to help make a creamy pasta sauce in the oven.

    This recipe for baked pasta differs from that original primarily because of the vegan cheese that goes into it.

    Yes, you will also need to use other vegan ingredients as well.
    However, in my opinion, this recipe is just as good as the inspiration recipe.
    Thank goodness for that! 🙂

    You may be wondering what is vegan feta made of.

    Let me start by telling you that feta cheese is not vegan because it is made with milk from an animal. The animal that provides that milk is usually a sheep.

    Obviously, vegan feta cheese is not made from milk from an animal.

    Instead, like with so many other animal products, vegan feta cheese is made with vegan ingredients that work together in an attempt to resemble both the flavor and physical attributes of the real stuff. You can usually find vegan feta at a store that sells vegan food or I will provide you with an easy recipe to make your own in a bit.

    Tips for making vegan pasta.

    I mentioned that you can easily make your own vegan feta cheese that resembles the real feta cheese both in taste and texture that it will add to the bake. You can purchase vegan feta cheese or make your own using the recipe below.

    Here are some more great tips for you.

    1. This recipe does not call for a traditional tomato sauce. Instead it relies upon the tomatoes, the cheese, and seasonings to create a sauce while baking in an oven. You will know that this has happened when the tomatoes 'burst' open.
    2. The best tomatoes to use in this recipe are the small and sweet kind. I like a cherry or grape tomato best in this recipe.
    3. When choosing the perfect pasta, use a pasta that is bite-sized. Rigatoni or penne are good choices. By the way, an easy cheat is to use a precooked pasta in this recipe.

    How to make vegan feta cheese

    I mentioned above that you can purchase vegan feta cheese or make your own for this recipe.
    Either vegan feta cheese choice should work well in this recipe.

    In a food processor or strong blender, process the following ingredients until blended.

    1. Firm tofu- 12 ounce block, pressed if possible to remove as much water as possible.
    2. Nutritional yeast- 1 ½ tablespoon.
    3. Melted Refined Coconut oil- ½ cup after melted.
    4. Lemon Juice- 2 tablespoons.
    5. White Wine Vinegar or Apple Cider Vinegar- 3 tablespoons.
    6. Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper. For a more authentic flavor of feta, you may want to be more generous with the salt.
    7. Once your ingredients have blended you can transfer them to a baking pan or dish that has been prepped with parchment paper for easy removal.

      Place the vegan cheese into the refrigerator for two to three hours or until somewhat firm.
      You can then cut the cheese into squares or a block to be used in this recipe.

      The ingredients needed to make Baked Vegan Feta Pasta

      • Tomatoes- 2 pints. I mentioned above that small and sweeter tomatoes such as cherry or grape work great in this recipe.
      • Garlic- 3 cloves, sliced in half.
      • Extra Virgin Olive Oil- ½ cup divided.
      • Vegan Feta Cheese- 8 ounce block. This is equivalent to one block of regular feta cheese. That is about the size of eight sets of dice to the eye. See my recipe above for how to make your own vegan feta.
      • Kosher Salt and pepper to taste.
      • Pasta- 12 ounces cooked. The baked pasta will be stirred into the baked ingredients above. Rigatoni or penne are good choices. By the way, an easy cheat is to use a precooked pasta in this recipe.

      How to make Baked Vegan Feta Pasta

      • If you are making your own vegan feta cheese, make this ahead of time as it will need time to set in the refrigerator so that you can cut it into size for this recipe.
      • Preheat your oven to 400 degrees and treat a baking dish for nonstick if desired.
      • Rinse the tomatoes and then place them into the baking dish. Then toss the tomatoes in ¼ cup of the oil along with the seasonings (salt and pepper as desired). The tomatoes should all be coated with the oil.
      • Push the tomatoes to the sides of the baking dish and then place your vegan feta cheese into the center of the dish. Drizzle the remaining oil over top of the feta and season with kosher salt and a generous amount of fresh black pepper. Then bake uncovered for 35-40 mins until the tomatoes skin have burst.
      • While the tomatoes and 'feta' are baking, boil the pasta according to directions on the package.
        Once the tomatoes and feta have cooked, remove from oven, use a fork and smash the tomatoes and
        feta together. Then use a wooden spoon to stir the mixture together inside the baking dish.
      • Add the cooked pasta to the baking dish and toss to coat. Add additional salt and pepper if desired. Serve immediately.
