This recipe is inspired more from a healthier eating perspective that is friendly to the Mediterranean diet.

This recipe is especially for anyone asking can you have potatoes on the Mediterranean diet.

It is easy to see why anyone would ask this about potatoes as they have been associated with a less than healthy serving methods that include different kinds of fats. There are certain diets that have banished potatoes calling them a starch or for being high in carbohydrates.

Yes, you can enjoy potatoes on the Mediterranean diet.

It is really more about how you prepare those potatoes than the potatoes themselves.
Potatoes are a fat free, cholesterol free, low sodium vegetable with protein and that are also a good source for Vitamin C and potassium.

You may be asking what kind of potatoes are best for the Mediterranean diet.

Really, to make this recipe, you can use whatever kind of potato you prefer.
For me, sometimes I prefer those yummy small potatoes while other times I prefer large Yukon potatoes because they are so filling.

To make these potatoes even better, you will need Mediterranean inspired seasonings.

Certainly oregano, parsley, salt and pepper along with a few other herbs perhaps qualify. However, a good cheat for Mediterranean diet seasoning would be to use prepared Mediterranean diet seasonings that you can easily find online.

Tips for making these roasted potatoes.

So I just mentioned that you can use any kind of potato that you prefer to use for this recipe.
Also, I mentioned that you can use a Mediterranean diet season blend for the seasonings in this recipe.

Here are some more great tips for you.

  1. Some of the success of this recipe lies in making sure that your potatoes are well covered with the olive oil and seasoning before roasting. Maker sure that you toss your potatoes well before transferring them to a roasting pan.
  2. These potatoes can be prepared ahead of time. Simply place them in a large zip top bag with the olive oil and seasoning and store in the refrigerator. You can use that bag to toss the potatoes in the oil and seasoning in as well.
  3. Leave the skin on your potatoes for this recipe as the skin is an important part of it. Make sure that the skin is clean however, before adding them to this recipe.

Here is how to make these more like Greek Potatoes.

Greek Potatoes are another, obviously Mediterranean inspired, recipe idea like this one. Often Greek Potatoes are boiled and then roasted.

Greek Potatoes are very much like these potatoes except for a couple of ingredients.

Greek potatoes are great because of the lemon and garlic that added and how they work together to season the potatoes.
To make these potatoes more like Greek potatoes simply add a quarter cup of lemon juice and a cup of bullion soup or soup stock to the seasoning process.

How to prepare the potatoes for this recipe.

Leaving the skin on the potato is a popular way to make roasted potatoes. If you choose to do so, I suggest cleaning the potatoes getting rid of any dirt or anything that may not be good that is one the skin (I soak and scrub mine). For most potatoes, slice the them into quarters while larger potatoes will probably need to be sliced up into more pieces to get a good size.

Also, I mentioned that you can use a Mediterranean diet season blend for the seasonings in this recipe.

If you choose to leave the skins on your potatoes, I suggest cleaning the potatoes getting rid of any dirt or anything that may not be good that is one the skin (I soak and scrub mine). As far as slicing your potatoes, for most potatoes, slice the them into quarters while larger potatoes will probably need to be sliced up into more pieces to get a good size.

The ingredients needed for Mediterranean Diet Friendly Roasted Potatoes/

  • Potatoes- 8 small (such as red potatoes) or 4 larger (such as Yukon gold). Clean your potatoes and quarter them.
  • Olive Oil- ½ cup.
  • Garlic- 2 cloves minced or chopped.
  • Seasonings- 3 tablespoons total. A good cheat is to use Mediterranean Diet Seasoning Blend or a Greek Seasoning Blend. Other options include Italian Seasonings, chopped parsley, Salt, and/or Pepper.

How to roast potatoes.

  • Preheat your oven to 400. You will need a large rimmed baking sheet or roasting pan. Giving the sheet or pan a light coating of nonstick may be a good idea to make clean up a bit easier to do.
  • Place your sliced potatoes in a large bowl.
  • In a medium mixing bowl, use a whisk or a fork to combine the olive oil, garlic, and seasonings. Then pour this mixture over the potatoes, tossing the potatoes as your pour. Continue to toss the potatoes until they are well covered.
  • Spread the potatoes evenly on the baking sheet or roasting pan.
  • Roast for 45-50 minutes (size of potatoes will make a difference) or until they are begin to brown and become crisp. You will need to flip the potatoes every 15-20 minutes to allow them to bake evenly as well.
