All because this cheesecake has less added fat than the normal cheesecake.
A while back I shared a similar low fat cheesecake recipe.
That recipe was for a no bake cheesecake that is friendly to the Mediterranean diet.
This recipe however is for a baked cheesecake that is friendly to the diet.

This recipe is especially for anyone asking if you can use Greek yogurt or low fat cream cheese to replace cream cheese.
The quick answer to this question(s) is yes but, with a couple of disclaimers here.
First off, you should know that there is a purpose for using a full fat dairy product and that purpose is to give the cheesecake that full fat structure.
Using alternatives for a full fat cream cheese means that your cheesecake will have less of that rich structure than a normal cheesecake.
The good news about using lower fat cheese is that it is more likely to be the healthier choice.
The other disclaimer is that we cannot use Greek yogurt to replace all of the cream cheese because it would leave our cheesecake with little if any structure. Think of this recipe as a healthier compromise to that full fat cheesecake.
You may be wondering what a good alternative or substitute is for cream cheese.
Like most no bake cheesecake recipes, this one is based upon cream cheese as the main 'cheese' ingredient.
There are some alternatives to cream cheese that you may want to use instead.
Cream cheese substitutes that are good alternatives.
- Low fat cream cheese rather than the regular full fat cream cheese.
- Neufchatel cheese, which is often substituted for cream cheese.
- Greek yogurt. my personal choice in this recipe. However, as mentioned, it should not be used to replace the entire quantity of cream cheese as the cheesecake will come out too thin.
- Ricotta Cheese, although I have not tried this. Please test the consistency first as you may need to combine it with a bit of cream cheese.
- Other possible alternatives include Quark or a vegan cream cheese.
Tips for making a low fat cheesecake.
I just mentioned that this recipe substitutes regular full fat cream cheese with a lower fat version and Greek yogurt. Also, I mentioned a few other alternatives that you could try however, I have not tried these and do not know how they would fair in a baked cheesecake.

- This recipe calls for ⅓ cup of honey. Alternatives to this include ½ cup of sugar or sugar alternative that is equivalent to ½ cup of sugar and that can also be baked with.

What you should know that cheesecake is best baked at a low temperature for a longer time.
Just as important is that your cheesecake is allowed to fully cool before removing it from the pan.
I should also mention that some folks find better success by baking their cheesecake in a 'water bath'.
A water bath is simply a larger pan such as a roasting pan that contains about and inch and a half to two inches of water in it.
The cheesecake pan is then placed inside of the water bath to bake in the oven.
To make this recipe you will need a springform pan.
A springform pan will make it easier for you to remove the cake once it has cooled.
You can also find round parchment paper to use in your pan as well.

- Bake this cheesecake in a prepped springform pan (with or without the crust as desired) and bake for 50-55 minutes or until the edges begin to brown. The center will not be fully set.
- Allow the cheesecake to cool on a rack and then transfer it to a refrigerator to cool overnight (it will allow the cheesecake to become firm).
- Remove the ring from the pan just before serving the cake.
