Start by cooking the pasta as indicated on the packaging. Allow the pasta to cool and drain before adding it to this recipe.
Make the dressing by whisking together the olive oil, vinegar and garlic . You can add additional seasonings as desired. Set this aside while you prepare the other ingredients.
In a large serving bowl, place the cooled pasta and the tomatoes. Pour half of the whisked dressing over the pasta and tomatoes and toss the ingredients
Just before serving, add the remaining ingredients and toss the salad. You can top the salad with additional ‘cheese’ and basil as desired.
