Bruschetta Pasta Salad,
Bruschetta Pasta Salad, A simple antipasto recipe that is served with pasta. Vegan, Vegetarian, and Mediterranean diet friendly.
Servings: 4
Ingredients
- 2 cups Pasta
- ¼ cup Extra Virgin Olive Oil
- 2 tbsp Balsamic Vinegar
- ½ cup Basil
- 2 cups Tomatoes
- 2 tsp Oregano
- ½ cup Vegan Cheese.
Instructions
- Start by cooking the pasta as indicated on the packaging. Allow the pasta to cool and drain before adding it to this recipe.
- Make the dressing by whisking together the olive oil, vinegar and garlic . You can add additional seasonings as desired. Set this aside while you prepare the other ingredients.
- In a large serving bowl, place the cooled pasta and the tomatoes. Pour half of the whisked dressing over the pasta and tomatoes and toss the ingredients
- Just before serving, add the remaining ingredients and toss the salad. You can top the salad with additional ‘cheese’ and basil as desired.
