Really, any bite sized pasta could work in this recipe. I like orecchiette, any spiral, or even bow tie pasta for this recipe.

  1. My salad uses fresh basil. However, you can use any kind of leaves and in any amount to make your salad.
  2. Adding some kind of bite sized meat can make this salad into a meal in itself. You van find vegan pepperoni and similar options here.
  3. Can you add fruit to this salad? I do. Depending on what I have on hand, I like bite-sized watermelon, strawberries or even blueberries in a salad such as this one.

How to store pasta salad.

This is one of those salads that needs a bit of time (about a half hour) for the ingredients to blend together with the dressing. If you are making this in advance or need to refrigerate this, save half of the dressing so that you can toss it into the salad upon serving. Also, wait to add the greens until you are about to serve this salad.

This is a simple recipe for a pasta salad. The ingredients added to the pasta salad are similar to bruschetta .

This salad is tossed in a basic oil and vinegar dressing.

When selecting a pasta to use, it is best to choose a pasta that is bite-sized or easy to eat.
Also, while I am using basil, you could also add additional greens to make this a larger salad.

Ingredients needed to make make this pasta salad.

  • Pasta. I like orecchiette, any spiral, or even bow tie pasta for this recipe. The pasta should be cooked, drained, and allowed to cool.
  • Olive Oil. Since this is for the dressing, I suggest using extra virgin olive oil.
  • Balsamic vinegar. This is also for the dressing.
  • Garlic. The garlic should be minced. This will go into the dressing.
  • Basil Leaves. Chop the basil leaves as needed .This is essential for a true bruschetta. However, you can add greens to this or use the greens of your choice.
  • Tomatoes. I like bite-sized tomatoes. Good choices include grape tomatoes or cherry tomatoes (or a combination).
  • Oregano. You can use fresh or dried if needed.
  • Parmesan Cheese or mozzarella cheese. You can find Vegan Parmesan Cheese here. Vegan mozzarella cheese can be found here.
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

Expert tip 👉 Take this salad on the go and prepare it when you get there. Simply use a dressing that has already been made for you to toss the ingredients into.

Prep time is about ten minutes plus additional time for cooking pasta as needed. This recipe serves four.

To prepare this delicious & healthy pasta, start by gathering and measuring all the ingredients.

Instructions.

  1. Start by cooking the pasta as indicated on the packaging. Allow the pasta to cool and drain before adding it to this recipe.
  2. Make the dressing by whisking together the olive oil, vinegar and garlic . You can add additional seasonings as desired. Set this aside while you prepare the other ingredients.
  3. In a large serving bowl, place the cooled pasta and the tomatoes.
  4. Pour half of the whisked dressing over the pasta and tomatoes and toss the ingredients.
  5. Just before serving, add the remaining ingredients and toss the salad.
  6. You can top the salad with additional ‘cheese’ and basil as desired.
