This recipe is for anyone asking what is angel hair pasta good for.

Angel hair pasta, or capellini, is a fine or thin pasta.
Think of angel hair pasta as a slimmer spaghetti.

Angel hair pasta is a perfect choice for a simple pasta meal.
Some pasta choices are heavy and meant to be filling.
However, angel hair pasta is light and as a result, a more simple pasta.

You may be wondering why use a roasted tomatoes instead of sauce.

I just mentioned that this recipe uses angel hair pasta as it is simple.
Using a sauce for this recipe can result in a heavier meal as the sauce can overtake the pasta.

Roasted tomatoes are the perfect ingredient to combine with the angel hair pasta.
This pasta meal is like a fresh taste of roasted tomatoes with a simple pasta tossed in olive oil.
It really is the perfect balance.

Tips for making Goat Cheese Pasta

Goat cheese is used in this recipe rather than other cheeses as it is lower in fat and sodium, making it more friendly to the Mediterranean diet. Like with other cheese, goat cheese is friendly to the Mediterranean diet when eaten in moderation.

Here are some more great tips for you.

  1. Cherry tomatoes are used in this recipe. Feel free to sub in grape or small vine tomatoes instead as long as the tomato is small in size.
  2. The sauce used in this recipe is a lemon sauce. For best results, use fresh lemon juice.
  3. Olive oil is used in the lemon sauce. However, butter really tastes best. You could try subbing in butter or even better, a Mediterranean diet friendly alternative, for some or all of the olive oil if you are wanting a more authentic tasting pasta.

Make this a vegan pasta dish.

This recipe is topped with crumbled goat cheese.
We are only using a small amount in order to keep this friendly to the Mediterranean diet.

There are vegan alternatives to goat cheese.
Check your local grocery store for vegan cheese, use nutritional yeast or simply use tofu instead.
I have vegan cheese recipes here.

How to store leftover pasta.

You can store any leftover pasta in an airtight container.
It should keep for a few days if refrigerated.

Roasted Tomatoes With Goat Cheese Pasta

Roasted Tomatoes With Goat Cheese Pasta

About this recipe for pasta.

This recipe is for angel hair pasta that is tossed in a lemon garlic sauce.
The pasta is topped with roasted tomatoes and goat cheese crumbles.

To make this recipe you will need to roast cherry tomatoes.

While the tomatoes are roasting you will be able to make the sauce.
Also, while this recipe features plain chevre (goat) cheese you can also use herbed goat cheese.

Ingredients needed to make Roasted Tomato and Angel Hair Pasta

  • Cherry Tomatoes- 1 pint. That is about 18-20 tomatoes depending on the size. Feel free to use another small tomato such as grape tomatoes.
  • Olive Oil- 2 tablespoons, divided.
  • Garlic- 2 cloves minced and divided. Feel free to use more as I would too 🙂 .
  • Angel Hair Pasta– eight ounces. Most boxes are 16 ounces which means you would need half of a box to make this recipe.
  • Oil- 4 tablespoons. This can be olive oil or a Mediterranean diet friendly oil such as sunflower oil. But, for optimal taste, butter (or a Mediterranean diet friendly alternative) can be used for part or all of the fat.
  • Lemon Juice- 1 tablespoon (about one lemon). Freshly squeezed is best.
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Salt, and/or Pepper.
  • Goat Cheese- four tablespoons crumbled (one per serving) or as desired.
  • Optional- Fresh basil, for garnish , red pepper flakes, and/or fresh thyme.

Oven Toasted Tomatoes

How to make Roasted Tomatoes With Goat Cheese Pasta.

  • Start by roasting the tomatoes. Preheat your oven to 400 and prep a rimmed baking sheet with foil. Toss the tomatoes in bowl with one tablespoon of olive oil and a teaspoon of minced garlic (one clove). Add seasonings to this as desired. Transfer the tossed ingredients to the baking sheet nad evenly distribute the tomatoes. Bake for 18 minutes or until the tomatoes begin to burst, stopping to stir the tomatoes after 10 minutes.
  • Meanwhile, cook the pasta to al dente according to the instructions on the package. Reserve ⅓ cup of the cooked pasta water for later use. Once the pasta has cooked you can transfer it to a large pasta serving bowl.
  • To make the sauce, in a large skillet over medium heat, sauté the remaining garlic (one clove minced) in the remaining olive oil until fragrant (about two minutes). Add the remaining oil or butter along with the lemon juice, pasta water, and optional seasonings. Cook the ingredients, stirring as needed, until the sauce has thickened (about three minutes).
  • Transfer the cooked sauce to the pasta serving dish and toss the pasta in it. Then top this with the roasted tomatoes.
  • Serve the pasta with the crumbled cheese or topping of your choice.
