They can also be used to make a stir-fry, pasta base, or even to flavor a vegan meal.

  1. This recipe uses butternut squash. Feel free to use canned butternut squash instead of a fresh one butternut squash.
  2. Substitutes for butternut squash include pumpkin or another squash such as acorn squash.
  3. While this recipe makes cubes, you could easily use a scoop to make balls instead or an ice cube tray.

How to use bullion cubes.

Possibly the most popular way to use bullion cubes is to make soup.
To get one serving of soup, you need to use 1/30th of this recipe for one cup of soup.

You can also dry this recipe to make ‘flakes’.

Simply use a food dehydrator or low temperature in an oven to dry this recipe out.
Then crush the dried cubes into flakes (it would take about a teaspoon to make one cup of soup).

How to store homemade bullion cubes.

Freezing the cubes is the easiest way to store these. These stock cubes will last in the freezer for up to three months in a zip top bag or similar wrapping.

Homemade Vegetable Stock Cubes

About this recipe for homemade stock cubes.

These stock cubes are made using fresh ingredients.
The base of this soup is butternut squash.

This recipe makes about two cubs of concentrated stock.
The suggested serving size for these cubes would be one cube once 30 cubes have been made.

Ingredients needed to make vegetable stock.

  • Carrots- 3 cups shredded.
  • Butternut Squash- 3 cups. I am using shredded butternut squash. Puree canned squash should work too.
  • Leek- 1 (white part) chopped. Feel free to omit.
  • Scallions- 2 chopped.
  • Onion- 1 chopped, white.
  • Parsley- ¼ cup chopped.
  • Garlic- 2 cloves minced.
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

How to make Homemade Vegetable Stock Cubes.

  • Wash and/or prepare vegetables as needed.
  • Preheat a large skillet on medium heat for about a minute. Then add the ingredients except for the seasonings. You can pretreat the skillet with non-stick or up to a tablespoon of oil. Cook the vegetables until softened, stirring. You can add seasonings as needed while the vegetables are cooking.
  • Once the vegetables have formed a paste, remove the skillet from the heat. You can transfer the ingredients to a strong blender or food processor to get a smoother consistency if desired.
  • To make basic cubes, simply line a rimmed baking sheet with parchment paper that overhangs the edges of the pan. Evenly spread the mixture and then freeze until hardened. You can then cut into cubes.
  • Another option is to simply transfer the mixture to an ice cube tray(s) for freezing to make larger cubes.
