Mediterranean Diet Air Fried Zucchini Chips

Equipment

Ingredients

  • 2 Zucchinis - rinsed and with ends cut.
  • 2 Eggs
  • ¾ cup Almond Flour
  • ½ cup Parmesan Cheese - grated
  • 2 tsp Seasonings -see post for details

Also needed, non stick spray and/or spray olive oil.

    Instructions

    • Carefully slice the zucchini if you have not done so. If your slices seem very watery then you can place them on a stack of paper towels or clean kitchen towel for about fifteen minutes to dry out a bit.
    • In a shallow bowl, beat or whip your eggs.
    • Next, in a second shallow bowl, use a whisk or a fork to mix together the almond flour, the seasonings and the cheese
    • Preheat your air fryer to 400 and lightly spray the basket.
    • Use a fork to dip the first sliced zucchini piece into the egg bowl and then dip the chip into the flour mixture.
    • Place the chip into the basket of your air fryer.
      Repeat this process until you can fill the basket without overcrowding the chips.
    • Lightly spray the chips with a bit of oil. Air fry for eight minutes, stopping to flip the chips at four minutes or until crisp.
      Repeat the process until you are done making all of the chips.
