Prepare. This includes chopping up your celery, mincing the ginger, and chopping the parsley and cilantro.
Dressing. In a small bowl or medium sized measuring cup, use a whisk to combine together the dressing ingredients. Taste the dressing and make adjustments as needed for flavor.
Combine. In a large bowl, combine together the celery, pumpkin seeds, shallots, parsley, and cilantro.
Toss Give your dressing a quick whisk and then pour about half of the dressing over the ingredients in the large bowl. Toss the ingredients and then add the remaining dressing and toss again.
Serve. Serve your celery salad with vegan cheese, crumbled cheese, or additional pumpkin seeds sprinkled on top.
