Equipment

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1 Onion ---diced.
  • 2 tsp Garlic ---minced.
  • 1 tbsp Curry Powder
  • 1 tbsp Garam Masala
  • 2 tsp Sugar
  • 15 oz Tomato Sauce
  • 14.5 oz Diced Tomatoes. -Drained with the juice squeezed out as much as possible
  • 13.5 Coconut Milk -- unsweetened
  • 31 oz Chickpeas --Use (2 cans) cooked beans that have been rinsed and drained.
  • 3 oz Baby Spinach
  • ½ tbsp Lemon Juice

Instructions

  • Sauté . Start by heating your oil in a large saucepan over medium heat for one minute. Then add the diced onion and cook until translucent (about two and a half minutes). Lastly, add in the garlic and sauté for another minute.
  • Season. Stir in the curry powder and garam masala and sauté for another minute to incorporate the seasonings with your other ingredients.
  • Gravy. To make the tomato based 'gravy', stir in the sugar along with the tomato sauce and and diced tomatoes. Stir until you get a gravy (about a minute or two).
  • Simmer. Next, stir in the coconut milk and then bring the sauce to low simmer at low to low medium heat.
  • Chickpeas. Add the rinsed and drained chickpeas to the skillet and cook until they are warm and slightly soft (five to ten minutes).
  • Serve. Remove the skillet from the heat and stir in your spinach. Then serve your curry as desired.
